Today’s Smashed (Resistant) Potato Salad with Italian Sausage and Aioli is posted in homage to the upcoming Memorial Day weekend; at least in years past this was most often a time we’d meet with friends in somebody’s big backyard to grill, play volleyball, and cultivate our early season sunburns and tall tale telling abilities.

I truly hope you’re scheduled to spend time with friends and family this weekend, and have some great food on the menu.

My other intent in posting this recipe was to remind folks of the health benefits of resistant starches, and share a recipe using potatoes – something that most of us eating lower carb tend to avoid in lieu of better choices. Don’t forget that cooked and cooled potatoes are a wonderful source of resistant starch, and here’s another great summer recipe to throw in the resistant starches are good pile…

This is a hearty potato salad, in fact my wife thinks it’s a meal in itself given the inclusion of a hearty Italian sausage (buy or make some quality fresh sausage); the aioli adds a load of healthy fats and a truckload of rich flavor as well.

I can’t imagine this without the dusting of ancho chile powder, but by all means consider that optional, and while the aioli recipe might sound complicated (if you’re not making mayo at home already), it’s a piece of cake.

Enjoy your long weekend.

Roughly 2 lb red-skinned potatoes, trimmed
Kosher salt

1/4 cup + up to 1/2 cup avocado oil, divided
1 medium sweet onion, chopped fine
1 small poblano pepper, stemmed, seeded, chopped small
3/4 pound fresh hot Italian sausage, casings removed
2 large egg yolks
1 large garlic clove, finely grated
1 tbsp fresh lemon juice
1/2 to 1 tbsp ancho chile powder
3-4 green onions, white and green parts, thinly sliced on the diagonal

Prep the spuds, place in a large pot and cover with cold water; season liberally with salt. Bring to a boil, then reduce the heat and simmer under tender (20-25 minutes). Drain, let cool in a colander, then throw in the fridge for at least overnight and preferably 24 hours.

On the day you’re making the salad, preheat the oven to 450 and remove the spuds from the fridge.

Heat 1/4 cup of avocado oil in a skillet over medium high heat, then add the onions and poblanos and cook until they’re beginning to soften (about 5 minutes). Add the sausage, and breaking it up with a spoon cook until well-browned and cooked through (6-8 minutes). Now transfer the sausage to a fine meshed sieve placed over a measuring cup and let the oil drain; press on the solids occasionally – you’re looking for roughly 1/4 cup of sausage oil. Add up to 1/2 cup more avocado oil to get to 3/4 cup.

Now it’s time to make an aioli, and you have two options. Classically, you would combine the egg yolks, grated garlic, and a teaspoon of water in a bowl, then slowly whisk in the sausage oil until thickened and smooth (adding the lemon juice at the very end, along with salt to taste).

Alternatively, combine the egg yolks, grated garlic, a tsp of water, and the lemon juice in a small cylindrical container just bigger than the head of your immersion blender, add the oil all at once, and then use your immersion blender to quickly whip up your aioli (my preferred method, and the one we use for making mayo here). Set the aioli aside (I threw it in the fridge as my kitchen was warm that day…)

Now smash the spuds with either your palm or a coffee mug bottom; you don’t want to totally destroy the integrity of each potato, but create some cracks and tears and flatten them a bit. Drizzle with a couple of tbsp of avocado or olive oil, season generously with salt, and throw in the oven until crispy and golden brown in spots and especially along the edges (25-28 minutes, turn once).

Now to finish things up – combine the roasted spuds, the sausage mixture and half the aioli in a large bowl and stir to mix well. Spread the remaining aioli on a platter, top with the mixture in the bowl, sprinkle with the ancho chile powder and the chopped green onions.

the Older Bolder Life Friday Feast: Chorizo Number 2 (or Tex Mex Chorizo)

During these long, dark days of winter (some might argue that’s both a figurative as well as a literal descriptor) we’ve been experimenting a bit once again with making sausages of various types and flavors in the kitchen at home.

There are a host of reasons to do so, including absolute control of sausage ingredients (quality and flavors), economics, curiosity, it just being damned fun when you’re in the mood, among others.

In a quick aside, if you’re not grinding meat at home, consider picking up an inexpensive home grinder (the one imaged here ran us about $70 a couple of years ago); it won’t be powerful enough to process the three elk you and your buddies harvested this year, but for routine, lighter-end home use, these little guys are easy to store, set up, and clean.

To prove the point, when making this batch of chorizo, I ground a 12-lb boneless pork shoulder, including set up and cleaning, in less than 25 minutes (not counting about 75 minutes in the freezer to tighten up the meat before grinding).

We happen to like really well made and flavored chorizo now and again, and I’ve written about it before here on the blog (excerpt below) –

…Having spent many a year growing up (and schooling) here in the Lone Star state, we’ve been fans of good chorizo around our camp for some time, having fiddled with chorizo recipes off and on now for well over a decade.

Sourcing good chorizo can be a challenge in that many if not most of the commercially prepared and marketed versions (of bulk chorizo, not the cured Spanish version) are incredibly greasy and contain parts of critters that you’d never ponder eating if you really knew they had been tossed in the grinder…

…And like most comfort foods prepared with care and attention, using the freshest ingredients, this version of chorizo is very likely nothing like you’ve tasted before and much more akin to the artisanal sausages (think Bruce Adell’s) you’ve thrown on the grill.  Even better, this one is child’s play simple, and you can tinker with spices to make you and your clan happy…

Here’s another chorizo recipe that we’ve come to adopt as our main go to, given the depth of flavors that come from roasting actual dried chiles for the spice base; around our camp we call this one our Tex Mex Chorizo (or Chorizo Number 2). The chiles add an amazing depth of flavor, and we find the hints of cinnamon, allspice, and cloves add interest and bit of nuance that’s very, very tasty.

As with all sausages you craft at home, this one can be formed into patties, crumbled, or even stuff into casings; we usually freeze in smallish patties and crumble if needed (like for next weeks loaded huevos rancheros.

2 pounds ground pork
6-7 dried guajillo chiles, cleaned, seeded, and stemmed
5 cloves garlic, minced
1/2 medium onion, diced small
1/3 cup apple cider or red wine vinegar (try it with both)
1 tbsp salt
1-2 tsp ground cumin
1 tsp dried Mexican oregano
1 tsp paprika
1/2 tsp cayenne
1/4 tsp cinnamon, optional
1/4 tsp allspice, optional
1/4 tsp ground cloves, optional

To get started, toast the chiles in a hot, dry skillet until puffed and fragrant (won’t take long); add enough water to cover chiles and set aside for 30-40 minutes.

When softened, place the chiles, onion, garlic and vinegar in your trusty blender or food processor and blend until smooth; you may need to add either additional vinegar or some of the chile soaking liquid if too thick (think tomato sauce).

Now let’s make some chorizo; place the ground pork in a mixing bowl, add the chile paste and the rest of the ingredients. Mix well, and this is probably best done with your hands. The first time you make this chorizo, fry up a tablespoon or two in a skillet to check the spices and adjust to suit you.

Cook this anyway you please – fry it up loose for breakfast tacos, add in some goodies (poblanos and mushrooms in the image below for a loaded huevos rancheros), shape into patties for the stovetop or grill or even stuff into casings. This recipe freezes like a charm, though we’ve found it’s best to shape in to patties before freezing.

the Older Bolder Life Friday Feast: Spicy Merguez Sausage

Marooned at home during these days of social distancing found us searching for a bit of a different spin on the traditional Easter dinner last weekend.

Our adult daughter Jess is spending some time with us, seeking some sunshine and a taste of spring after the long, cold, and dark Montana winter. She’s a photojournalist working in the outdoor space, and after recent journeys “BC”, which translates these days around our camp to before-COVID, she’s come to really enjoy Middle Eastern flavors.

After kicking around several options, we decided to make up a batch of Spicy Merguez Sausage, using a combination of lamb and pork belly; the pork belly was chosen in part as our favorite local butcher didn’t have pork fat on hand, but some very very nice belly.

We played around with several different batches of spices, and finally settled on this fairly traditional array including fennel seed, coriander seed, and cumin seed, enriched with paprika, garlic, a nice harissa, and a hint of fresh cilantro.

As you home-crafted sausage fans know well, freezing your meats pre-grind until they’re firm (20-30 minutes) makes them handle much better, and pre-toasting spices before grinding and mixing brings all sorts of additional, deeper, and richer flavor notes.

The truly ambitious can certainly whip up a batch of their favorite harissa as well, though we used a trusted commercially prepared brand and were quite happy.

3 pounds lamb shoulder or leg, trimmed and cut into 3/4-inch cubes
1 pound skinless pork belly, cut into 3/4-inch cubes

2 tsp whole fennel seed
2 tsp whole coriander seed
2 tsp whole cumin seed
2 tbsp kosher salt
2 tsp good paprika
1 tsp cayenne

6-7 garlic cloves, trimmed and minced
1/3 cup fresh cilantro, finely chopped
1/3 cup harissa (perhaps more)
1/3 cup ice water

Prep the two meats then spread in a single layer on a lined baking sheet; throw in the freezer for 20-30 minutes. (See note above.)

Meanwhile, toast the fennel, coriander, and cumin seed in a cast iron skillet over medium heat (preheat the skillet) until fragrant; remove to a pestle or spice grinder and grind to a fine powder. Place in a small bowl and combine with the salt, paprika, and cayenne.

When ready to grind, scrape the chilled meats into a bowl, sprinkle with half the spice mixture, half the garlic, and half the harissa then toss to combine. Now grind the meats into a bowl set in ice through your small die.

Scrape the meat into the bowl of your stand mixer, add the remainders of the spice mixture, garlic, cilantro, and harissa, add the water, and mix on low speed until the mixture has combined and is uniform (and a little sticky).

While the rest of the sausage chills in the fridge, test cook a small patty and then adjust seasonings (pending how hot the harissa might be, we almost always add more).

Shape into patties (or links) or stuff into prepared casings.

Of course these need to stay in the fridge (or freezer) until cooked, and smell heavenly while sautéing until well-browned and cooked through.

the Older Bolder Life Friday Feast: Spicy Southern Sausage and Cheese Balls

Growing up in the South, just about every holiday spent with extended family, or party with friends, included at least plate or platter of some version of these classic sausage cheese balls.

One of my grandmother’s (the scratch baker grandmother) recipe was something along the lines of classic Southern chef Vivian Howard’s; my other grandmother used the (gasp, cough, wheeze) Bisquick-based recipe still floating around out there today.

It didn’t matter, as kids we still stuffed our pockets with these little bite-sized delights and fought over the last two on the plate.

After moving to a primal | paleo food plan years ago, to be honest I’d never even thought about a gluten free, primally-oriented version of these until a friend recently asked me if I’d ever run across one as she was planning a party menu.

There are several good ones floating around, and this one isn’t all that different from many you’ll see, save for kicking the spices up quite a bit, and adding additional flavor with alliums and peppers. I’ve added a shallot (or green onions), finely diced, to sauté with the sausage, my grandmother’s dry mustard, cayenne, and red pepper flakes (or minced serranos), and even use Monterrey jack cheese occasionally to mix things up. (In the pic above, we used cheddar on the left and MJ on the right.)

Upping the coconut flour to 1/2 cup (a generous 1/2 cup) makes these a little more bready, though my wife prefers ‘em with less coconut flour. Another tip – portioning out with a cookie scoop (I used a No. 60, about a tbsp; made 7 rows of 5 balls, which just fit on a standard 1/2-sheet) make the prep easier and faster.

These are great for a quick snack and my lovely wife has been grabbing handful for a work lunch on the run.

1 pound spicy ground sausage
1 medium shallot, diced fine OR
2-3 green onions, thinly sliced

4 eggs
4 and 1/2 tbsp butter, melted
2 tbsp sour cream or softened cream cheese
1/3 to 1/2 cup coconut flour (generous measure, see note above)
1/2 tsp dry mustard
1/2 tsp garlic powder
1/2 tsp good salt
1/4 tsp baking powder
1/4 to 1/2 tsp cayenne

2 cups freshly grated sharp cheddar or Monterrey jack cheese

Optional
Toasted red pepper flakes
1-2 minced serrano or jalapeno peppers

Sauté the sausage for several minutes, breaking it up into small pieces. As it’s beginning to brown, throw in the shallot or green onions. Brown the sausage well, and drain in a paper towel-lined bowl.

While the sausage is browning, melt the butter and set aside. Grate the cheese and line a baking sheet with parchment. Preheat the oven to 375.

Now combine the eggs, butter, sour cream/cream cheese, mustard, garlic powder, salt, baking powder, cayenne, and red pepper flakes or minced peppers; whisk to combine well. Now whisk in the coconut flour until well combined.

Stir in the sausage-onion mixture and the cheese until evenly distributed, then form into balls roughly 1-inch in diameter (I used a cookie scoop) and place on the lined baking sheet. Place fairly closely on the sheet in 7 rows of 5 and it’ll just fit a standard 1/2-sheet.

Bake for 16-18 minutes until slightly browned; cool and store in the fridge (should be good for a week or so, though they won’t last that long).

I know it might be considered to be out of fashion in some food circles, but we’ve been playing around with Southwestern and Tex-Mex inspired meatza preps lately.

We’ve dialed in our meatza / pizza sauce recipe (on the schedule to share in the next few weeks), and have been using both bulk pork sausage and seasoned ground beef as our meatza base. Last week I cobbled together a very good Tex-Mex meatza using this homemade Older Bolder Chorizo No. 1; it was amazing.

Having spent many a year growing up (and schooling) here in the Lone Star state, we’ve been fans of good chorizo around our camp for some time, having fiddled with chorizo recipes off and on now for well over a decade.

Sourcing good chorizo can be a challenge in that many if not most of the commercially prepared and marketed versions (of bulk chorizo, not the cured Spanish version) are incredibly greasy and contain parts of critters that you’d never ponder eating if you really knew they had been tossed in the grinder.

Speaking of grinder, hopefully you’re fresh grinding pasture-raised pork for your sausage at home; your homemade sausage game will never be the same with a grinder within easy reach.

And like most comfort foods prepared with care and attention, using the freshest ingredients, this version of chorizo is very likely nothing like you’ve tasted before and much more akin to the artisanal sausages (think Bruce Adell’s) you’ve thrown on the grill.  Even better, this one is child’s play simple, and you can tinker with spices to make you and your clan happy.

Finally, we’ve taken to adding in just a few whole cumin seeds too; they add some interesting texture much like fennel seeds in good handmade Italian sausage.

Best made a day in advance to fully develop the flavors, you can cook this crumbled, in patties, and even stuffed into casings for the grill. And oh yea, it’s a masterpiece meatza base…

2 lb fresh ground pork or turkey (mix of white and dark meat)
1 bunch fresh cilantro, leaves and small stems, chopped
2 serrano chile peppers, seeded and finely diced
1-2 tbsp red chile powder
1 tbsp sweet paprika (though smoked would work great here too)
1-2 tsp ground cumin
1 tsp chipotle chile powder
1 tsp cumin seeds
1/2 tsp ground coriander
2 tsp kosher salt (or to taste)
Scant 1/4 cup red wine vinegar

This is another one of those recipes that couldn’t be easier.

Mix all the ingredients in a large bowl (using your hands if you’re of the mind to) until well combined. I like to let it rest in the fridge overnight before use, and I’d suggest taking a tablespoon or two of the mixture, cooking it, and adjusting spices to your taste.

Use and store as you would any fresh sausage.

Enjoy.
