the Older Bolder Life Sauce Wednesday: Libby’s Verde Cashew Wonder Sauce

This past week I was chatting with our friend Chef Libby in Austin about different sauces she uses to dress-up proteins during the long, hot Texas summers, adding interest and flavor to the food she dishes up in her catering business.

Being based in Austin she of course has a decided bias toward the flavors of Texas, one of her favorites being Tex-Mex or Southwestern cuisine (I share her bias as well!). She’s been using a variety of nut-based recipes the past few years to create innovative sauces; this has in part been driven by increasing requests for vegan-compliant recipes, but also because they just taste good, hold well, and can be worked into a variety of other dressings and flavor profiles.

One of her go-to versions is what she calls her Verde Cashew Wonder Sauce, based on either raw or roasted cashews, a handful of flavor-packed fresh herbs, a splash of acid, and whatever flavor additions her recipes for the day call for.

Libby insists her very favorite version uses fresh lime juice (instead of the vinegar), cilantro, and a bit of arugula for its peppery bite, along with a chopped serrano or two, though she was careful to point out that the sky is the limit in terms of what herbs to use.

She also noted there were two other minor decisions to make; one, whether to use raw or roasted cashews. Of course, if using roasted cashews, be mindful of the oil they’re roasted in, and you’ll (most likely) want to dial back the added salt (adjust to taste). After making dozens and dozens of recipe batches, she said she prefers to use roasted nuts for the added flavor dimension as well.

The second decision to make is whether or not to soak the nuts for 10 minutes prior to blending; Libby said her vegan chef friend who taught her the recipe always soaked raw cashews, though Libby insists the recipe works just as well without soaking in her kitchen, whether using raw or roasted nuts.

We’ve enjoyed this one alongside a bit crudite platter and cold ancho cumin coffee roasted pork tenderloin this week…

2 cups cashews, either raw or roasted
1 cup fresh, tender herbs, i.e. parsley, cilantro, dill, basil, chives, etc
2-3 tbsp unseasoned rice or white vinegar
1-2 tsp good salt
1 cup (plus a bit more) filtered water

Optional (see notes above)
1-2 crushed garlic
Lime or lemon juice instead of the vinegar
Chipotles in adobe
Other fresh peppers (i.e. jalapeño or serrano)

If soaking the cashews: bring two cups of water to a boil, place the cashews in a heatproof bowl, pour the boiling water over, cover for 10 minutes, then drain.

To prepare, add the nuts to your trusty blender, add the herbs, vinegar or citrus juice, salt, and one cup filtered water. Blend for one to two minutes until smooth and yogurt-like; you will likely need to add a bit more water.

the Older Bolder Life Sauce Monday: Easy Romesco Sauce

We’ve been talking a lot about sauces the past few weeks, and deservedly so.

Sauces are workhorses during the summer grilling season; they add flavor, interest, color, and sometimes even texture to meals featuring grilled and roasted proteins and vegetables. Chilled sauces can even help you play the temperature game with foods, which can be especially refreshing during these dog days of summer.

I’m not sure where we first came across the recipe for this Easy Romesco Sauce, but it’s become one of our favorites this summer. The careful application of fire and time renders bell peppers (and perhaps a Mediterraneo Dulce) – for the pepper tolerant – tender and almost smokey in flavor. Let them steam covered for 20 minutes and the skins slip off in your fingers, and they’re a cinch to stem, seed, and chop.

Romesco sauces originated in Spain and most that I’ve run across are tomato based with either almonds or hazelnuts added; this is one of those sauces that allows you to shake things up and build it to suit your (family) palate. The roasted pepper base in this recipe simply resonates with our palates at home.

This sauce brings together a cast of players you might not think of at first blush, though most of us in the ancestral food space appreciate the nifty flavor of almond butter; add in a bit of garlic, tart acid in the form of a flavorful vinegar, and a pinch of spice, and you’re in for genuine treat.

We had this again a few nights ago with an ancho-cumin-coffee rubbed pork tenderloin and a spicy pepita jalapeño cauliflower rice; I made a batch of this Columbian Aji Sauce to have a red and green (thank you New Mexico) effect for the sauces – it’s was amazing…

2 large red bell peppers, whole
1 red Mediterraneo Dulce pepper, whole (optional)
Avocado oil or EVOO for grill grate
1 garlic clove, grated
2 tbsp almond butter (unsweetened)
2 tbsp red wine vinegar (sherry or rice wine vinegar in a pinch)
1 tbsp avocado oil or EVOO
1 tsp good salt + more to taste
1/2 tsp smoked paprika
1/2 tsp cayenne pepper

Grill the whole peppers over high heat, on the grill is best but you can char them over a gas burner or under the broiler as well. Place in a large bowl, cover, and let steam and rest until cool enough to handle (15-20 minutes).

Skin, stem, and seed the peppers, then place the flesh in your trusty blender along with the garlic, almond butter, vinegar, oil, salt, smoked paprika, and the cayenne. Blend until smooth, taste for salt, and thin if needed with a splash of oil or more vinegar.

Best served immediately, though can hold in the fridge (covered, airtight) for a few days.

the Older Bolder Life Sauce Monday: Garam Masala and Cucumber Dip

I don’t know what it’s been like around your neighborhood this summer, but after a short break from the summer heat here in North Texas, we’re back to typical scorching summer days this week.

Summer is prime time grilling season of course (though thinking about it, when is it not grilling season?) and we’re always looking for a nifty sauce, salsa, slather, or dip to make things more interesting.

Here’s a great one – Garam Masala and Cucumber Dip, a kissin’-cousin to my wife’s favorite tzatziki and my personal go-to in this flavor arena, Bebe’s Curry Mayo and Dip. This one couldn’t be easier to stir together, and with a few simple options you can fancy up this very simple prep to suit any occasion.

By the way, the crispy shallots are a nice touch our friend Chef Libby in Austin uses; she’s always reminding us how easy they are to make at home, and what an amazing vinaigrette the shallot oil makes when you’re done sautéing the shallots. If you’ve not done this before to garnish salads or Thai dishes at home, try it using this technique.

Of course this one is for the daily tolerant, and I’d encourage you to track down some sheep’s milk yogurt as my lovely wife did last week….

1 cup unflavored whole milk yogurt
1 large garlic clove, finely grated
1/2 to 1 tbsp garam masala
1/2 to 1 tsp good salt
1 4-to-5 inch cucumber (Persian if you can), small dice or grated

Optional
Crispy shallots, see note above
1/2 cup pomegranate seeds

Add the yogurt to a small bowl, grate in the garlic, and add the garam masala and salt. Stir to combine well, then fold in the grated or diced cucumber. Taste for seasoning, remembering that the curry/masala flavors will intensify a little over time; I almost always end up using a full tablespoon of the garam masala.

Top with the optional goodies, grab the crudite platter, and go to it.

the Older Bolder Life Sauce and Dip Monday Recipe: Butterbean Hummus

Living in the nutritional ketosis world for the past 15 months or so, I’ve only pulled together a hummus plate a couple of times; now that I think about it, both were for entertaining company with a big crudite spread before the main meal event.

Don’t get me wrong, we’re big fans of a well-prepared and flavored hummus; some of our favorite eateries here in the DFW metro serve up a wonderful butterbean hummus as part of their Southern-inspired menus – and it’s always delicious with an innovative platter of crispy vegetables alongside.

We just haven’t served up hummus of late as I’ve been running (very comfortably I might add) at or below 20 grams of soluble carbs per day for more than a year now, and let’s face it, a nice hummus with a plate full of crispy crudite could easily double or triple amount in one sitting. (For the record, I’ve never played the keto game as if the keto police were looking over my shoulder; I’ve simply felt great at that level, and it’s allowed me to fairly painlessly accomplish my weight loss and body recomposition goals this past year.)

And like many of you as well who are thriving eating a low/lower carb nutrition plan, we pretty much carved legumes out of our routine several years ago, not only for their carb load relative to nutrient content, but their anti-nutrients as well. Truthfully, I can’t even recall the last time I cooked a big “pot of beans” at home, though I have to confess we very rarely and thoughtfully nibble at some when eating TexMex out with friends.

That said, my lovely wife recently developed a hankering for some hummus and veg to take to work for lunch during these blisteringly hot Texas summer days; the same week, two clients asked me if we had a favorite hummus recipe to share as well.

This Butterbean Hummus recipe is one that we worked out years ago, originally of course with chickpeas, though it works with just about any other cooked legume; here we’re using butterbeans, though Great Northerns would work as well. And as in the image above, we like ours with a bit of fresh ground pepper and a dusting of a good paprika as well.

Of note, many prepared hummus products you will find at your favorite grocer are make with canned beans (BPA risk), terrible seed oils, and other preservatives and stabilizers. It’s far better to soak and cook your legumes of choice (even better if fermented too), use quality oils and tahini, fresh lemons and spices, and you’ll craft a hummus worthy of an indulgence now and again.

4 cups cooked and cooled legume of choice (chickpeas, butterbeans, Great Northern, etc)
1/4 cup cold water
Freshly squeezed juice of 1-2 lemons (2-4 tbsp)
2 tbsp good tahini paste (more to taste)
2 tbsp good extra virgin olive oil
2 garlic cloves, chopped
1 tbsp (generous) ground cumin
Good salt and pepper to taste

For service, drizzle with more olive or avocado oil, finely chopped cilantro, maybe even a dusting of paprika or cumin/coriander.

This one is easy and intuitive to stir blend together. Into your trusty food processor go the cooked legumes, followed by the next 7 ingredients. Blend together until as smooth as you like (we like a little texture in our hummus), and adjust the tahini, lemon, cumin, salt, and pepper to your tastes.

Serve either at room temp or chilled (we like it chilled during these hot summer days), and drizzle with more oil and any of the optional finishing touches above.

The Older Bolder Life Avocado Monday: Bacon, Green Onion, and Avocado Dip

Once again unintentionally dating myself a bit, I have to admit I grew up during what was probably the peak of the “French Onion Dip” era. You know, the dip recipe made using a carton of sour cream and the little packet of French onion soup mix. And while the ensuing mixture tasted like a little like a chemistry experiment gone awry, this dip showed up on the chip and dip table of many a gathering during my youth, and there was usually a crowd fighting over the best dipping chips and elbowing for prime position in front of the bowl. Oh my (deep sigh).

Just this past week we took a step back in time (to those French onion dip days) when Chef Libby in Austin shared this recipe with me, something she’d been working on for a catering event several weeks ago.

She is a huge fan of avocados, and had tweaked this recipe to serve with a big crudités platter for an event she’d done just after PaleoFx for one of the vendors. Sautéing the thinly sliced green onions in the bacon fat is a stroke of genius, and produces a flavor (in a real food way) very similar to the old-school dip recipe above.

Bacon is always good, no matter what, and the tartness of the yogurt (and the lime), combined with a bit of heat from a finely diced pepper (we favor serranos here) pack an amazing punch that’s surprisingly tasty. We dipped sliced raw vegetables in this recipe, and slathered it over grilled pastured-beef burger patties.

Wow, this one is good.

2-3 slices bacon, cooked crisp, drained, and crumbled
3 large green onions, trimmed and thinly sliced
3/4 cup plain Greek yogurt
1 large or 2 small avocados, chopped
1-2 tsp fresh lime juice
3/4 to 1 tsp good salt

Optional
1 additional green onion, white and pale green parts thinly sliced
1 jalapeno or serrano pepper, finely diced
2-3 tbsp chopped cilantro

Sauté the bacon until crisp, drain, then crumble into a medium bowl.

Using the reserved bacon fat, sauté the green onions until soft and just beginning to caramelize; add to the bowl with the bacon. Stir in the yogurt, salt, lime juice, and avocados, mashing the avocados up as you go, though we like to leave some chunks of avocado to add some texture. Add the diced pepper and cilantro if using.

Top with an additional scallion if desired, and go to it.

the Older Bolder Life Sauce Monday: Turmeric Tzatziki

I’m not sure where or how it came to be actually, but my wife is crazy about tzatziki.

We came to appreciate authentic Greek food in early adulthood, and while she’d traveled and lived internationally (North Africa and Switzerland), she’s never been to Greece and experienced the wonderful cuisine on the ground there. Her family did live and work in Algeria for a while, in a fairly multicultural setting, and there they were exposed to all sorts of Mediterranean delicacies.

No matter what the history, she loves tzatziki.

I was talking with a friend about dips to serve at an upcoming party she was hosting, and we somehow came around to this wonderful Turmeric Tzatziki, one of my wife’s recent new favorites. Blooming the turmeric in the hot oil is a genius step, and this dish really pops with a wonderful burst of lemon (using both fresh juice and zest), ginger, garlic, and of course the essential grated cucumber.

Classically made with greek yogurt, we think this is just as good (maybe even better) when made with sour cream. It’s delicious with a plate of crudite, and a perfect complement to any Greek-spiced protein. And for the bonus today – if you’re handy in the kitchen, this one will talk all of ten minutes to put together (ok, maybe 15).

And don’t forget the fresh ground pepper; you need those pepper based compounds (piperines) to optimize absorption of the curcumin in your turmeric. And is just tastes good…

1 to 2 tsp good ground turmeric
2 tbsp avocado oil (or EVOO)

2 small cucumbers or 1/2 English hothouse cucumber
1 tsp good salt

1 cup Greek yogurt or sour cream
1 tbsp fresh lemon juice
1-2 garlic cloves, grated
1-2 tsp grated fresh ginger (peeled)
1 tbsp chopped fresh mint (chiffonade), or more
1/2-1 tsp fresh lemon zest, grated
1/2-1 tsp fresh ground pepper
Good salt to taste (see note)

Stir the avocado oil (or EVOO) together with the turmeric in a small saucepan over medium heat; remove from the heat when it just starts to bubble, stir again, and set aside to cool.

As the oil is cooling, grate the cucumber coarsely, spread on a clean dishtowel on a plate, and salt with 1 tsp of good salt. Let rest for 10-15 minutes, then wring out as much water as possible from the cucumber, add to a medium bowl.

Now add the yogurt or sour cream, lemon juice, grated garlic and ginger, mint, lemon zest, fresh ground pepper, and the turmeric oil. Stir well to combine, and correct the seasonings, including salt as needed.

Best served promptly, will keep covered in the fridge for a bit.

the Older Bolder Life Sauce Monday: Fifteen Mayo (and Aioli) Flavors That’ll Change Your Life

One of our common daily quests is to prepare and enjoy healthy foods that are packed with flavor, varied and interesting, and (for the most part) easy to prepare.

One of the ways we do that around our kitchen is to use the incredibly versatile avocado or olive mayo recipe we keep referencing in recipes here on the Older Bolder Life; with an immersion blender in hand making this is child’s play, and having practiced a bit, it takes me all of 3-4 minutes to blend up a double recipe in a quart Mason jar every 7-10 days.

Technically we’re making a mayonnaise, even though some good folks out there call it an aioli; they’re kissing cousins, but there are some critical differences (for a reasonable take on the distinctions, see this).

The avocado oil mayo recipe we’ve shared (link above) is a perfect vehicle to carry a host of great flavors to compliment whatever you’re serving; here are fifteen of our favorites. The beauty of every one of these suggestions is your ability to add as much or as little of any ingredient you want to to suit your own (or your family’s) tastes.

Two quick tips: one, when incorporating whole ingredients, for example roasted garlic, roasted red peppers, chipotle peppers in adobo, etc, the more finely you chop them (or blend in a mini-food processor), the smoother your finished mayo will be. Prefer some texture in the finished product? Don’t blend as much. And two, remember that when adding spices to a mayo or aioli, their flavor tends to intensify over time.

Roasted garlic. Cut a head of garlic in half, rub the cut sides with avocado or olive oil, and roast until browned and soft. Squeeze into your mayo, add a bit of lemon juice, salt, and pepper.

Cilantro Lime. One of our favorites; don’t forget a bit of fresh lime zest along with the juice too.

Roasted red pepper. Roast your own or used a quality jarred brand, allow to drain before chopping or blending in. We like this with a little bit of Dijon or Cajun mustard and lemon juice too. Try with a few soaked and softened sun-dried tomatoes too.

Chipotle. Use either dried and soaked chipotles or those packed in the little cans with clinging adobo (which I tend to reach for first as it’s easier, and the clinging adobo sauce is so well flavored). Consider a whiff of cumin too.

Chipotle lime. Ditto the above; lime juice and lime zest make this one probably one of the all time flavor favorites.

Smoked Paprika. Surprisingly tasty, this one needs a bit of cumin to really bring out the flavors, at least in our book, and is very good with a quality sweet paprika too.

Lemon Dill. Fresh dill is best, though dried works, and use both fresh lemon juice and zest to make this one pop.

Truffle. Just a few drops of truffle oil are all it takes; I have to admit perhaps my personal least favorite but my wife loves this one.

Sriracha. Try different sriracha brands, or use this paleo version.

Avocado or avocado garlic. A recent addition to our rotation, this one is great and even better with roasted garlic. Don’t forget a bit of lemon juice to keep this one fresh.

Roasted garlic and chipotle. ‘Nuff said and better with a splash of lemon or lime juice.

Creole mustard. We keep reaching for Zatarain’s Creole mustard when making this one; even better with a bit of a Cajun spice blend mixed in.

Ginger sesame. Best with minced fresh ginger, though fresh ground ginger works too; try it with a splash of toasted sesame oil.

Blue cheese. Try this one with good blue cheese crumbles, and splashes of Worcestershire and lemon juice.

Curry. This one sings with a good, fresh curry powder, lime (or lemon juice), and perhaps even a whisper of cayenne.

the Older Bolder Life Snack Tuesday: Buttermilk Feta Dip

As the seasonal turn to spring picks up momentum here in North Texas, we’ve been reaching for some of our favorite sauces and salsa to flavor up some of our typical proteins in the rotation.

My wife and I love great Greek food; I think she’d eat tzatziki sauce at every meal given the chance, though this Buttermilk Feta Dip is stunningly tasty, particularly when you track down some really nice feta (try it with a brined, goat’s milk feta).

Of course this is one for the dairy tolerant, and while it’s great with just the feta, buttermilk, salt, and olive oil, throwing in any or all of the goods on the optional list below adds layers of flavor and interest.

We had this last night again with radishes and sliced pickling cucumbers; it was even amazing on the cumin-dusted sautéed mahi too.

1/2 pound good feta, in brine, look for goat’s milk
1/3 to 1/2 cup full-fat buttermilk
Good extra virgin olive oil drizzled

Optional
1/2 teaspoon (or more) good sea salt
1/2 teaspoon (or more) fresh ground pepper
1-2 teaspoons chopped fresh dill, mint, or oregano
1 teaspoon (or more) fresh lemon juice
1 medium garlic clove, minced (or pressed)

Drain the feta and crumble into a medium-sized bowl. With a stiff whisk, work the feta to break it down a bit further, then drizzle and whisk in buttermilk (1-2 tbsp at a time) until the mixture looks like a smooth, creamy dip.

Taste for salt, and add any or all of the optional ingredients, whisk again to combine, top with a drizzle of good olive oil, and another grind of fresh black pepper.

Set this out with a platter of fresh, crunchy crudite or grilled vegetables (bell peppers and mushrooms are our favorites currently) and watch it disappear. It’s also unbelievably tasty on cold, leftover grilled lamb.
