the Older Bolder Life Friday Feast 22 June: Barbary Coast Lamb Kabobs

My lovely wife spent some of her developmental years growing up in North Africa (Algeria), back when the region was far less tumultuous than today; she and her family grew to savor the many of the regional dishes of the area, including the roasted lamb kabobs of what used to be called the Barbary Coast (Morocco, Tunisia, Algeria, and Libya).

We occasionally enjoy pasture-raised lamb at home, whether it be a leg of lamb, lamb chops, or what we’ve come to call these Barbary Coast Lamb Kabobs.

This dish is fun to serve for a crowd, is a piece of cake to put together, and most importantly, is absolutely delicious. Around our house at least, there must be tzatziki or a great yogurt sauce on the table, as well as great Greek-inspired salad (we’ll post our favorite this summer at some point).

As a bonus, this recipe works incredibly well with chicken as well.

2 lb leg of lamb, trimmed, cut into 1 and 1/2- inch cubes

Marinade
3/8 cup olive oil
1/3 cup fresh lemon juice
3 large garlic cloves, minced
1 tbsp fresh mint, chopped
2 tsp fresh grated lemon peel
2 tsp fresh ground pepper
1 tsp (generous) coriander (ground)
1 tsp (generous) cumin (ground)
1 tsp good salt

Vegetables
2 red onions, quartered, with resulting pieces then halved
1 red bell pepper, stemmed and seeded, cut into 1 and 1/2- inch pieces
1 green bell pepper, stemmed and seeded, cut into 1 and 1/2- inch pieces
2 baby zucchini, trimmed, cut into 1 and 1/2- inch pieces
1 small container grape tomatoes
Optional: 16 dried apricots, soaked in boiling water 5 min. then drained

Mix together the entire list of marinade ingredients in a medium bowl, whisking well to combine. Add the cubed lamb, stirring gently but thoroughly, cover, and refrigerate for at least 2 hours, 4-8 hours is better.

When ready to cook, fire the grill, and thread the meat onto skewers alternating with peppers and onions; thread the remaining vegetables onto skewers artfully.

Grill the meat and vegetables; the meat (pending your fire), should be medium-rare to medium in 7 to 8 minutes; turn and baste every 3-4 minutes for an even cook. The vegetables may take a minute or two longer.

Serve hot off the grill with the accompaniments of your choice (see above).

Older Bolder Life Foundations: There is a Far, Far Better Way to Eat

There is indeed a far, far better way to eat, using a diet format that fits our human physiology better than any other. This food plan is intuitively simple, is accessible to just about anyone and everyone, is packed with nutrients, and probably most importantly – is built for the long-haul as it’s tasty, satisfying, and allows you to be as creative as ever in the kitchen. And for those who want to dig deep into the science behind their own physiology, appears to make the most sense in terms of the science-based evidence in hand today.

I’m talking about a low carbohydrate, moderate protein, high fat approach to nourishment (LC/MP/HF); it’s not a novel approach at this point in mid-2018, but appears to be the optimal one for human physiology (for the vast, vast majority of us on the planet today at least) based on evolving scientific understanding of how the body works, in particular with regard to the cadre of hormones that regulate nutrient transport, metabolism, storage, and your hunger.

Granted, there are plenty who disagree, and on a variety of grounds (many of which are based on preference and not physiology). And there are a host of criticisms of LC/MP/HF that typically mischaracterize the approach in some way; i.e. eating low carb means you never any any carbs at all. That’s fine, after all, we’re all ultimately personally responsible for how our bodies function, and how we relate to the world around us.

If you’re truly serious about living life as fully as possible, optimizing your physical, cognitive, and emotional/spiritual potential, you cannot ignore the body of science and experience detailing the successes of low carbohydrate, moderate protein, high fat food plans. Here are just a few of the reasons the LC/MP/HF approach works.

Eating Low Carb/Good Carb Tastes Good

One of the keys for success of any long term, healthy eating plan is that is has to taste good. A simple concept, yet so often ignored in the past (I’m remembering one of my yo-yo dieting parents eating cabbage braised in tomato juice twice a day for weeks as child…). For a long term eating plan to succeed there needs to be an vast array of food choices that are satisfying and attractive, and eating nutrient-dense, fresh, healthy carbs (leafy greens with high fat dressing, crispy steamed broccoli dripping with butter, sautéed mushrooms, and more), fits the bill quite nicely.

Eating Low Carb/Good Carb Puts Insulin In Its Place

Insulin plays a number of roles in the body, with one of its principle tasks being to store excess nutrition, and it does so by storing fat. High carb diets chronically keep insulin elevated, keeping fat locked in storage, and the longer you live with elevated levels of insulin, the more risk you become of developing insulin-resistance, which among other devastating things makes it much harder to drop excess body fat.

Eating a low carb/good carb diet lowers insulin levels, one of the first critical steps in getting you back on the healthy track.

Eating Low Carb/Good Carb Increase Fat Intake (And Fat Ain’t the Bad Guy)

Long demonized in the Standard American Diet (SAD), fats are very likely the preferred, optimal fuel for your body to primarily run on, a point we’ll be addressing at length here over time. Among many other things, fat in a meal slows gastric emptying, prolonging a sense of satiety, which means you’re not eating for longer periods, and thus overall lowering calorie intake (which for most of us, is a good and necessary thing!)

Eating Low Carb/Good Carb Emphasizes Quality Protein

Particularly as we age, lean muscle mass diminishes (there are host of reasons for this), and protein intake is critical to combat this natural decline; it’s even more important in the setting of trying to lose excess body fat – you want to the fat to go away, not the muscle!

Quality protein in the diet, particularly in the setting of low carbs, contributes massively to your sensation of satiety, meaning you’re less hungry, sharper longer, and break out of the carb-crash roller coaster pattern the SAD provides.

Eating Low Carb/Good Carb Implies Embracing the Good and Dumping the Bad

There are several foods, ironically centerpieces of the typical American diet, that contribute more to the damaged and deranged health of the population than anything else – sugar, grains, and the highly-oxidized, polyunsaturated, industrially-processed vegetable and seed oils being the worst of all.

Eating a SAD diet, these three categories often make up the preponderance of calories consumed, despite the hard science record that carbs are the principle driver in determining body composition and that excess glucose (yep, we’re looking right at you grains and sugars) is the root culprit fostering the obesity epidemic and the flood of disorders (i.e. T2DM, heart disease) that walk hand in hand with it.

This isn’t a carb-phobic approach – it’s sweeping the crap carbs out of your diet, and replacing them fully with nutrient-dense, fiber-rich, healthy carbs at levels that make sense physiologically.

This is a meaty topic (slight pun intended), and one not well-covered in a few paragraphs; there’ll be much more to come and there’s a plethora of great information at your fingertips today.

Eating Low Carb/Good Carb Works Quickly

Not intentionally referring to the quick loss of water weight that often occurs when transitioning to a LC diet (there’s no question that early success in weight loss efforts often encourages longer-term compliance), but more to the reality that particularly in the obese, dropping carbs to a “low or very low” level (in the setting of appropriate protein and fat intake) often leads to rapid drops in fat stores (maybe even targeting belly fat).

My own experiences speaks to this phenomenon of rapid weight loss; after a 100 lb weight loss and subsequent stall, entering a period of thoughtful nutritional ketosis led to a prolonged run of dropping 2 to 2.5 lb of fat per week, eating to absolute satiety every single day.

Eating Low Carb/Good Carb is Easy, Intuitive, and Simple to Follow

During my years in practice, I advised overweight patients (when treating their bone, muscle, joint, or spine issues), to take a serious run at weight loss; most often I steered them to what I used to call ‘rational’ programs – like Weight Watchers and The Zone. The most common complaints/reasons for failure that I heard over and over was the fact that patients found the regimented programs too restrictive and regimented, difficult to learn, and unsatisfying.

Successful diets and food plans – whether pursuing weight loss, optimizing health, or high level athletic pursuits – are based on simple, easy to understand, almost common-sense principles that allow one to intuitively navigate the sea of food choices laid before us every day. A carefully crafted LC/MP/HF approach, like Primal and Paleo for example, offer just such a framework.

Eating Low Carb/Good Carb Packs in Nutrients, Not Calories

I’m often stunned at how often a LC skeptic will assert that eating a low carb diet is harmful from the standpoint of missing out on key nutrients. The assertion is almost shamefully easy to counter, as in replacing calorie-dense, carb-dense foods – bread with every meal for example – with a fresh leafy green (or sautéed spinach, broccoli rabe, or green beans, etc.). Doing so ups your micronutrient density significantly, and adds a host of healthy phytochemicals as well.

Sugars are devoid of micronutrients, and grains bring along a lot of unsavory baggage in addition to their unfavorable carbohydrate density – namely lectins (including of course gluten), micronutrient-binding phytates, and the little discussed protein gliadin, binding to opiate-receptors in the brain (more on this little gem later).

the Older Bolder Life Salad Sunday 17 June: Versatile Vinegar and Oil Dressings

Around our kitchen we truly love adding a variety of flavors to the cascade of fresh salad greens that show up in various farmers markets this time of year, flavors that are bright, fresh, and interesting are a cinch to achieve using simple but oh-so-good vinaigrettes made from the workhouse combination of vinegar and oil.

Of course everyone is familiar by now with the classic formula for combining vinegar and oil to make a vinaigrette/dressing – 1 part vinegar to 3 parts (classically olive) oil. Grind in a little fresh pink salt and pepper, whisk it up, and viola, you have a fresh, well-balanced, tasty finish for that salad.

We tend to add a bit more acid – in the form of vinegar(s) or citrus juices – to most of ours as we enjoy a bit more acidity with the salads we prepare; don’t be afraid to experiment and change things up, it’s almost a sure thing you’ll find something you like better than your usual dressing along the way.

Quick Suggestions on Oils for your Dressing

Occasionally we’ll add just a bit of a nice Nut Oil, like macadamia, hazelnut, or walnut to bring a delicious nutty flavor component. Another great one to try is subbing in Browned Butter for something really different; the friend who showed us used fresh lemon juice and white wine vinegar for hers, but a host of vinegars would play here.

A chef friend uses a quarter or half of a Soft Avocado in place of the oil in many of her dressings, with vinegar or citrus juice for the acid; it’s quick and creamy.

And while a good extra virgin olive oil is the gold standard here, we love using a nice Avocado Oil in our dressings too.

Quick Suggestions for Vinegar and Oil Variations

For a quick and easy Italian version, to your basic dressing / vinaigrette, add 1/2 tsp (or a bit more) of a pre-mixed Italian seasoning, and a pinch (or more) of finely crushed red pepper flakes.

For a quick and easy Creamy version, to your basic dressing / vinaigrette, add 2-3 tbsp of olive oil/avocado oil mayo, plain Greek yogurt, or even full fat sour cream.

For a quick and easy Mustard version, to your basic Italian dressing / vinaigrette, 1 tsp (or more) of your favorite Dijon, Cajun, or whole-seed brown mustard, and optionally a tsp of good honey.

For a quick and easy Creamy Garlic version, to your basic Creamy dressing / vinaigrette, add 1 finely grated or pressed garlic clove and a whisper of Italian seasoning.

For a quick and easy Parmesan Cracked Pepper version, to your basic Creamy dressing / vinaigrette, add 1-2 tbsp grated nice parmesan and 1/4 tsp (or more) fresh, coarsely-ground black pepper.

The list could go on and on, but you get the idea. The goal here is to pack a variety of great flavors into simple-to-prepare, uber-fresh dressings and vinaigrettes you can easily craft right at home.

the Older Bolder Life Friday Feast 15 June 2018: Bunless NOLA Burger

A few years back (in my pre-Primal/Paleo life), while passing through New Orleans traveling from Texas to Georgia, I stopped and grabbed what was at the time one of the most outrageously good burgers I’ve ever eaten in my life.

It was a crafty mixture of fresh ground chuck (20% fat for the best flavor), andouille sausage diced very small, with a splash of hot sauce and finely chopped toasted pecans thrown in for good measure. Tangy blue cheese was melted over the top, and among typical burger fixin’s were also the Southern staple pickled okra and slow-caramelized onions, with a spicy Cajun-inspired mayo to boot.

We’re long past the days of tasteless, chewy, toxic burger buns getting in the way of some serious burger enjoyment (bunless all the way!), and now and then we’ll mix these together and grill up a batch for bunless burger party Cajun style.

At bare minimum pick up some fresh ground chuck for these, and consider grinding (or having your butcher grind) up a mixture of 40% chuck, 40% brisket, and 20% short rib for the best burger you’ve ever imagined.

Burgers
3 lb ground chuck (20% fat), or a mix of chuck, brisket, and short rib
1 lb andouille sausage, cut into very small (< 1/4”) pieces
1/2 cup (generous) finely chopped, toasted pecans
1-2 tbsp hot sauce, Crystal preferred for authenticity
2 tsp good salt
1-2 tsp fresh ground black pepper

Cajun Slather (Mayo)
1 cup homemade avocado oil mayonnaise
1 tbsp fresh lemon juice
2-3 tsp. of your favorite Cajun/Creole seasoning mix (caution, they’re salty)
Optional: 1-2 tsp of Crystal hot sauce, or Sriracha

Essential Fixin’s
Crumbled blue cheese
Pickled okra pods, 16 or so, split lengthwise
Caramelized onions
Firm sliced tomatoes
Lettuce
Anything else your heart desires

Gently mix the burger ingredients together by hand, and then, using a very soft hand, shape into 8 8-ounce patties. Chill on a baking sheet in the fridge for an hour at least.

Stir up the cajun slather (mayo) and let rest in the fridge.

Fire the grill, and grill these bad boys over a medium hot fire for roughly 4-5 minutes, then turn, throw on the cheese, and grill another 3 or so.

Build your bunless burger masterpiece and go to it; try these with the pickled okra too – the crisp burst of vinegary goodness is a great fit.

the Older Bolder Life Salsa Sunday 10 June 2018: Tomatillo Avocado Salsa

Here’s a great tomatillo and avocado-based salsa that we stir up at least a couple of times a month during the long, hot Texas spring/summer/half of fall season. Avocados are always good, and the tart, almost citrusy burst from the tomatillos complements the rest of the ingredients very, very well.

I first posted this over on ChiWulff.com (fly fishing site) as we traveled up to Livingston (Montana) for our son’s wedding in June of 2016…

…(we) are on the road this week, back home in Montana for Jake’s wedding this weekend. On the way up, we stopped for the night in Cheyenne (great town) and asked our motel clerk for her favorite local dining spots; she steered us to a little hole in the wall Mexican food place (El Charrito).

The service was stellar, the food was very good, but the highlight was a bowl of a rich, smooth and creamy, green salsa. Just tart enough with wave of herbal cilantro and the classic back of the tongue heat of serrano peppers, it was astoundingly delicious and prompted a minor scuffle (I lost) for the last dip-able chip in the bowl.

After a bit of needling, a barrage of compliments and very near shameless begging, the matron of the place dictated the following recipe out and I scribbled it on a spare napkin hastily pulled from the stack…

We’ve tweaked it around the edges a bit since then (more serranos for one thing), but this one’s very close to the recipe we wrote on the napkin that night.

2 pounds tomatillos (roughly 30), husked, rinsed, rough chopped
2 firm, medium avocados, pitted, peeled, rough chopped
2 bunches fresh cilantro leaves, chopped (about a cup and a half)
1/4 cup fresh lime juice, may need more
3-4 serrano chiles, stemmed, leave the seeds
3-4 green onions, trimmed, rough chopped
1/2 to 1 tbsp good salt

Wash and prep the vegetables.

Into a large blender or food processor go the tomatillos, then rough chop with a couple of short pulses. Now add the remainder of the ingredients and puree until it reaches your desired consistency. Cover and chill if not using immediately.

This makes roughly 4 cups, enough for a dinner with friends; it’s easy to cut in half or make more pending the crowd. If holding a bit that’s leftover, drop one of the avocado pits into the airtight container and squeeze a bit more lime juice over the top.

the Older Bolder Life Friday Feast 8 June: Green River Orange Chicken

I first posted a version of this Green River Orange Chicken over on Chi Wulff, a fly fishing blog I’m involved with, back in the fall of 2014, after an interesting outing on the Green River in Wyoming with friends and a former chef from Hawaii.

Here’s part of that story –

…Back a few years ago, on one of those three day runs to the Green River I was known to take occasionally with some friends in Salt Lake City, we had a buddy bring along a friend of his wife’s visiting from Hawaii…

…For the life I can’t remember this guy’s name; long story short he had never fly fished but made a game effort and caught some fish (it was Cicada season and for the most part fishing was like shooting fish in a barrel, particularly on the afternoon floats).

The second day I had him in my boat for both the morning and afternoon floats and he began to wear on us a bit given his endless descriptions of ‘how much bigger and faster and beautiful’ the fish were in Hawaii. It wasn’t as bad as a couple of my compadres would have you believe, though by that evening several guys were ready to tie him up, attach all the drift boat anchors in camp and assign him to the not-so-briny deep of Flaming Gorge Reservoir.

His saving grace came in the fact that he had (in another life) worked as a chef and that evening whipped out of couple of big containers what we’ve come to call Green River Orange Chicken that had been marinating in a cooler.

He grilled it over a hardwood charcoal fire as the sun set that evening in camp, with eleven famished guys watching his every move. He grilled it to perfection, taking care to get the skin crispy and golden brown with just a spot of tasty char here and there. While the chicken was grilling he cut up, with a bit of flair as I recall, several pineapples and avocados to serve alongside, grilled of course…

Some might whine about the honey in the marinade; I happen to agree with Mark Sisson that a little bit of honey (or maple syrup) to flavor a marinade isn’t absorbed by the chicken to any significant degree. On the other hand, as our palate has become Primal-aligned, we leave it out and don’t notice a whisper of difference. You make the call.

1/2 cup Grand Marnier (or other orange liqueur)
1/3 cup fresh lime juice
1/3 cup soy sauce / tamari
1/3 cup finely minced ginger
1/3 cup chopped cilantro (basil plays really well here too)
1/4 cup honey
2-3 tbsp Asian garlic chile sauce
1 and 1/2 tbsp. minced fresh orange zest
1 tsp. salt
4 green onions, white and green parts, minced

2 chickens, cut up, rinsed, and patted dry

Combine all ingredients save for the chickens, mix well, and set roughly 1/3 of the marinade in the fridge in a covered container.

Pour the remainder of the marinade over the chickens in either a gallon resealable bag or your favorite flat marinading container; take care to make sure all the chicken is coated, cover, and throw in the fridge for a minimum of 4 hours (eight is better).

When you fire the grill, pull the chicken out and let come to room temperature.

Set up to grill over indirect heat (due to the little bit of honey in the marinade) and grill the chicken for about 10-12 minutes per side (varies based on your fire and grill setup), basting if you want to with a bit of the reserved marinade. Pull it when the chicken is done and let rest a couple of minutes.

If you’re not in nutritional ketosis, this is a great place to indulge in a high-quality corn tortilla along with the chicken, a sliced avocado or two, and one of your favorite primal/paleo salsas.

My Keto Report Card 7 June 2018: Week Seven

Last week I shared a bit in terms of introducing my personal journey in Nutritional Ketosis, including a very quick overview of the why’s behind my decision to give a genuine ketosis run a try.

I’m now in week 8, loving what I’m feeling and seeing, and enthused to keep up the routine indefinitely at this point.

As noted last week, my typical day starts climbing out of bed fairly early (between 530 and 6) after 8 hours of sleep on average; of note, I never set an alarm and am geared to awaken then with the earliest light of day.

Though not a new feature for me personally with being in nutritional ketosis (NK), I’m never hungry in the morning and typically drink a cold brewed coffee with a bit of cream and a tbsp of collagen powder (2 grams carb, 10 of protein, and 7 of fat) and work for several hours, with very functional mental acuity right off the bat.

To be fair, I’d been gravitating toward a compressed eating window / intermittent fasting during the several months prior to my starting NK, choosing to tune in and eat WHEN (when hunger ensues naturally).

I typically workout mid to late morning (pending how work tasks are progressing), fasted, consuming water only before a three times per week HIIT workout, with a walk/hike 5-6 days per week in addition, with a short, very focused sprint workout weekly if I’m feeling in prime shape.

On most days, hunger hasn’t pushed me to eat until sometime after the noon hour, and as often as not, nearer to 2.

It’s then time for errands and back to the desk for the afternoon’s work, calls, correspondence, etc, with a family dinner typically somewhere between 6 and 8pm.

Some Interesting Metrics Closing Week 7 of Nutritional Ketosis

Up until starting my NK run, I’d lost 100 lbs without tracking a single calorie consumed over the 15 months window we’d been eating a fairly compliant LC/MP/HF diet around our camp, though of note been in a weight loss stall for several months (Dec-Feb).

I did however, principally at first as a learning tool, and later in part due to my medical training induced affinity for objective data, track a fairly specific diary of my daily carb intake (net carbs), which from the get go were always under 100 per day, and most often under 60 gm/day.

Again, largely as a matter of intellectual curiosity, when starting my NK run, I decided to track, as closely as possible, daily intake of carbs, protein, and fat, and to calculate my total caloric intake and deficit against my estimated BMR (adjusted for activity), as well as the percentages of carb / protein / fat contributions to my total calories.

Over the seven weeks thus far, the rolling averages of my intake and caloric accounting include –

Daily Carb Grams: 28.5 (114 calories)
Daily Protein Grams: 90.3 (361.2 calories)
Daily Fat Grams: 124.4 (1115.5 calories)

Average Total Calories per Day: 1602.8
Average Calorie Deficit per Day: -1487.2

Average Carbs as Percent of Total Calories per Day: 7.1%
Average Protein as Percent of Total Calories per Day: 22.4%
Average Fat as Percent of Total Calories per Day: 69.7%

Of note, for the past 4 weeks in particular, my daily average intake of carbs and protein have been drifting lower (protein approaching 80 gm/day for the past three weeks), with daily intake of fat drifting slightly higher. This has happened without conscious intention on my part, eating to satiety at every meal and snacking judiciously as desired.

Weight loss during the 7 weeks in NK so far has been 16.5 lb; with one day of hunger noted worthy of mention in my workout dairy.

Energy levels have been excellent with no dip in performance whatsoever, and in fact performance gains have been noted in every aspect of my workout routine. Sleep has improved, though I have noted more vivid dreams several days per week (not interrupting the sleep cycle).

My Nutritional Ketosis Week Seven Bottom Line: Hot Damn!

From the perspective of one of my critical goals at the start of my NK journey – break through a weight loss stall – so far it’s been a rousing success in average roughly a 2 and 1/3 lb weight loss per week, eating to comfortable satiety every day, with enhanced mental clarity and plentiful energy for the daily routine and workouts. All with no hunger. Making staying in nutritional ketosis a no brainer at this point.

the Older Bolder Life Friday Feast 1 June 2018: Ed’s Thai Steak on a Stick

Just about everybody we tend to hang out with loves to eat some version of ‘meat on a stick’ – whether it’s our friend and mentor Ed’s sweet fire chicken skewers, chicken satay, yakitori, grilled shrimp with chipotle glaze or just about any manner of kebab or skewer you might bring to mind.

Ed happens to be an ageless, incredibly fit, at times wryly cranky friend, mentor, and occasional business partner who loves good great, healthy food, and often pesters us to cook it for him, particularly when he’s entertaining guests and friends.

Inspired by the Ed’s Sweet Fire Chicken Skewers mentioned above, a few years ago we played around with several recipes we’d come across for a Thai-inspired spin on a beef kabob for another one of Ed’s parties.

After several near misses we finally arrived on this version, since remembered as Ed’s Thai Steak on a Stick, originally made with several thick-cut rib eyes, though (and it should be noted upon Ed’s suggestion) the added tooth and deep, beefy flavor of tri-tip makes for a great kabob / beef skewer as well.

It needs the overnight marinade time and all the Thai flavors (lime, garlic, lemongrass, chiles, ginger, and basil); dig around at your grocery and you’ll find it all. And be sure to leave some of the fat cap to render on the grill and baste that glorious meat as it cooks. The recipe from years ago included a bit of brown sugar in the marinade; as our family’s tastes have become more ancestrally aligned, we leave it out.

Ed guarantees you’ll come back to this one again…

2 cups full-fat, unsweetened coconut milk
1/2 cup fish sauce
2 tbsp fresh lime juice
10 garlic cloves
8 thai chiles (red or green, stemmed)
4 lemongrass stalks, bottoms thirds only, outer layers peeled
3 to 4 inch piece fresh ginger, peeled
6-8 basil leaves
2 tbsp brown sugar, packed (optional)

4 lb. trip-tip or ribeye (or a combination), cut in 1-inch cubes

First combine all ingredients (except the meat of course) in your trusty food processor or blender and puree. Pour over the trimmed meat (leave some of the fat cap on the meat), massage it in with your hands to make sure all the meat is coated; cover and refrigerate overnight.

When ready to cook, drain the meat, thread loosely onto skewers (packing too tightly slows the cook); then fire the grill.

Now grill over a medium-hot fire until nicely marked and cooked to your desired level; I like to quarter-turn these every 2-3 minutes to make sure every side of the meat develops a nice sear and crust. You’re probably looking at a 12-16 minute total cook here, pending how large your meat dice is and how hot your fire.

Pull the meat, let it rest at least 3-4 minutes then serve hot with your favorite Thai-inspired dipping sauces on the side.

Hanger steaks, like their kissing cousins skirt steaks, derive from the diaphragm though are much more tender and flavorful than skirt - which is still our favorite #fajita cut on the planet. I put this bowl together last weekend before heading down to Austin with our Asian Fried Cauliflower Rice; hot damn, was it tasty. And it’s a simple prep and cook to boot.
