The Older Bolder Life Friday Feast: Thai-Inspired Coconut Steak on a Stick

Though I have to admit we were somewhat late to the realization that Thai-inspired flavors and spices, along with coconut, often play wonderfully with beef, we’ve become big fans of the combination around our camp.

With cooler weather on the horizon we’ll be slipping these Thai-Inspired Slow Roasted Short Ribs and this Coconut Braised Chuck Roast with Gremolata back into the rotation; fall is indeed just around the corner.

Traditionally we’ve always hosted a get together sometime during this upcoming long weekend; ribs have almost always been on the docket for that crowd, though I couldn’t resist putting these on the menu this year.

I happened to run across an amazing deal on some grass-fed rib eyes, but this will work with a number of other cuts; one of the first times I made it recently we used tri-tip and it was damned delicious.

There’s nothing very complex about the recipe, though do note that this works much better with an overnight marinade in the fridge. And the basting sauce is optional, though you’ll need to do something with the remaining coconut milk from the can (other than stir it into your coffee tomorrow), and basting the steak skewers on the grill really does boost the flavor.

My other best suggestion is to make more than you think you and your guests will eat; this one makes a killer lunch the next day over salad or just on it’s own.

2 pounds rib eye, top sirloin, tri-tip, etc, cut into 1-inch cubes

Marinade
1 cup unsweetened, full-fat coconut milk
6 garlic cloves
4-6 red Thai chiles (Fresnos or red jalapeños in a pinch), stemmed, chopped
1.5-inch piece of fresh ginger, peeled, rough chop
1/4 cup good fish sauce
1 tbsp fresh lime juice
1 tbsp lemongrass puree
Optional: 1 tbsp palm sugar (or brown sugar)

Optional Basting Sauce
1/2 cup unsweetened, full-fat coconut milk
2 tbsp good fish sauce
2 tbsp fresh lime juice
2 garlic cloves, minced
1-2 tsp lemongrass puree (optional)

Add all the marinade ingredients to your trusty blender and puree until smooth and uniform; pour over the prepared steak cubes in a large bowl, stir to make sure every piece is coated, cover and throw in the fridge overnight.

When ready to grill, drain and discard the marinade and thread the meat onto skewers, just touching, not tightly packed.

Fire the grill, and use that remainder of the coconut milk from the can to make the optional basting sauce; stir the ingredients together over low heat until combined, set aside.

Now grill over a medium fire, turning and basting every 2-3 with the basting sauce if using, for 14 to 16 minutes until done to your tastes.

the Older Bolder Bookshelf: Franklin Steak

In Texas, the Southwest, and the greater barbecue world, then name Aaron Franklin is often uttered in hushed and revered tones.

He’s the pitmaster at his iconic Austin joint Franklin Barbecue, he’s co-founded a nifty fusion Asian smokehouse – Loro, written another culinary best seller Franklin Barbecue: A Meat-Smoking Manifesto, and taught thousands via his PBS show BBQ with Franklin.

I’d known, via barbecue and cooking circles we follow, that another steak-focused cookbook was coming this past spring, and being a long-time fan of Franklin’s impressive skills, his bent to teach and share knowledge freely, and his understated, oft-acerbic wit, I’ve had the book on my short list for a year or so – it was worth the wait.

Others have noted that his Franklin Steak (released this past April) doesn’t read like a typical cookbook; sitting down and paging through you might think you’d picked up a culinary school textbook.

The book is divided roughly into three sections: sourcing great steaks and meat (you’ll be led to do some out of the box thinking here), prepping meat and fire (including grills, fuels, etc) to get the best results, and then of course he dives deep on cooking great proteins, with a variety of approaches presented, a look at classic steak side dishes, and even libations to pair with your steaks for those so inclined.

Around our camp, and metaphorical camp fire, we’ve been having extraordinary results with sous vide techniques for steaks of late, though Franklin’s book has prompted several new, and very tasty, approaches to prepping and finishing steaks here at home.

The book is well illustrated, beautifully photographed, damned instructive, and a worthy addition to the cookbook shelf of any steak, and cooking, fanatic.

By the way, this isn’t a paid review, I bought my personal copy a few weeks back in Austin.

The Older Bolder Life Friday Feast: Smokey Chipotle Coffee Rub

As I’ve shared in many of our recipes over the past year, we’re enthusiastic fans of big flavors around our camp, and have rarely come across a spice rub we didn’t enjoy.

For years now we’ve played with a variety of rubs (and sauces & marinades) featuring coffee in one form or another, and this Smokey Chipotle Coffee Rub has come to be our very favorite coffee based rub for most proteins – it’s absolutely wonderful on beef and pork.

As with most spice mixtures, using the freshest spices you can get your hands on yields the best results, as does grinding the coffee beans just before use (if you’re geared to do so). Chipotle peppers bring such a nifty smokey flavor to the flavor game here and it plays incredibly well with the coffee notes; using a good smoked paprika adds another layer of flavor as well.

As we’ve become Primal/Paleo aligned in 99% of our cooking, I’ve taken to leaving the brown sugar out or cutting it down, though both my wife and can taste the difference, and frankly you can count us among the crowd that considers a whisp of sugar in a marinade or rub a reasonable indulgence now and again.

Try this one using the core five spices at least once, and experiment with the optional flavors listed as well, or throw your favorites into the mix next time around. I used this on a couple of grass-fed New York strips last weekend….

2 parts dark roast or espresso coffee, finely ground
2 parts fresh chipotle chile powder
2 parts kosher salt
1 part ground coriander
1 part good paprika (try a smoked paprika here too)

Optional
1 part brown sugar
1/2 part freshly ground black pepper
1/2 part garlic power/granulated garlic
1/2 part powdered ginger

Combine the 5 core ingredients (the first in the list) along with whatever optional ingredients you’d like to throw in the mix. Stir to mix well.

Rub your protein generously with the rub and let rest for at least an hour (in the fridge if longer).

Grill/roast/smoke per your routine; the NY strips I did this past weekend were some of the best steaks we’ve done in a long time – one hour at 129 in the sous vide followed by a quick sear over hardwood charcoal. Hot damn.

the Older Bolder Life Friday Feast 26 April: Hanger Steak Bulgogi Bowl

Count us among the millions around the world who are fans of a great Bulgogi – the spicy Korean dish which (I’m told) literally means “fire meat”. Bulgogi is typically a composed of thin slices of (traditionally) beef, marinated in a garlic, ginger, soy sauce, and gochugaru (Korean red pepper flakes) mixture with a bit of grated pear for a hint of sweetness. It’s typically cooked quickly over an open flame on a grill or sautéed / stir fried in a skillet at home.

You can use whatever protein suits you to craft your bulgogi; the pictures here feature one of our favorite cuts, a thick-cut hanger steak. By the way, it’s a cinch to carve perfectly thin slices from any protein if you’ll throw it in the freezer for 3o to 40 minutes before slicing. You want it to just begin to freeze and tighten up; too long and it’ll be rock solid.

There are of course a few adjustments to be made to make this dish primal and paleo compliant, the principal one being using tamari or coconut aminos to replace soy sauce, and while most wouldn’t squawk too loudly about a tablespoon of brown sugar in a marinade, we think this is best with a bit of maple syrup or honey (it doesn’t take much given the grated pear); it’s very well flavored without any additional sweetener in fact.

When making this a few days back I didn’t have time to prepare one of our favorite salads or slaws (like this Asian Inspired Cantaloupe Salad, Thai-Inspired Celery Salad, Quick Chinese Cucumber Salad for example), even a simple spring greens salad looks, and tastes, great in the bowl.

And finally, when putting this together in a bowl, we can’t imagine serving it without a recipe of the Asian Fried Cauliflower Rice I posted last week (perhaps without the bacon for this recipe).

Give this one a spin, you come back to it again and again…

For the Simple Bulgogi
1/2 small pear, grated
3-4 tbsp tamari or coconut aminos
2 garlic cloves, grated
1 and 1/2 tbsp grated fresh ginger (peeled)
1 -2 tbsp gochugaru or 2-3 tsp crushed red pepper flakes
2 tbsp toasted sesame oil
1/2 to 1 tbsp maple syrup, honey, or sweetener of choice, optional
Thinly sliced green onions for serving

2 lb protein of choice (boneless short rib, hanger steak, flank, boneless chicken, pork loin)

Avocado, coconut, or olive oil

Good salt

1 recipe Asian Fried Cauliflower Rice

A simple salad or slaw; we like this one with one of these…
Asian Inspired Cantaloupe Salad
Thai-Inspired Celery Salad
Quick Chinese Cucumber Salad

Place your protein of choice in the freezer for 30 minutes prior to slicing; after the time has passed, using a very sharp meat knife, slice the meat into very thin strips.

While the meat is cooling, combine the grated pear, tamari, garlic, ginger, gochugaru, maple syrup, and sesame oil in a medium bowl and whisk to combine, then pour into a large resealable bag.

Place the sliced meat in the bag with the marinade, squish it around to ensure all the meat is coated, and let sit for 30-45 minutes at room temperature, or chill no longer than 12 hours.

When ready to cook, heat roughly a tbsp of oil in a large skillet over medium-high heat; while the oil is heating, drain the meat. Place half the meat in a single layer in the hot skillet and cook without moving it for 1-2 minutes, until a nice sear develops. Now toss for another 1-2 minutes until cooked through and crispy around the edges. Transfer to a plate and repeat with the remaining meat.

Now building your bowl, with roughly 1/3 bulgogi, 1/3 Asian Fried Cauliflower Rice, and 1/3 the salad or slaw of choice. Artfully sprinkle sliced green onions over the bulgogi and cauliflower rice, spice it up with a little sriracha, and go to it.

the Older Bolder Life Friday Feast: Coconut Braised Chuck Roast with Gremolata

Several months ago I posted this wonderful Thai-Inspired, Coconut Braised Short Rib recipe (with gremolata!); we’ve enjoyed it several times since, and swear it tastes better every time around.

That recipe was one that a friend down in Austin (Chef Libby) had adapted from Bon Appetit, upping the spices quite a bit, and adding some Texas-inspired spice via jalapenos to gremolata.

I thought all along this recipe would be readily adaptable to other braising meats, and recently did a few runs with nice, grass-fed chuck roasts. While we love a great short rib prep around our camp, my wife and I both agreed this chuck roast version is probably even better. The aromas of this roast will drive everyone in the house crazy as it’s slowing cooking down in the oven – the coconut, lemongrass, and ginger are delightful.

And a tip from Libby via the short rib version –

Libby also had shared a tip last year about using lemongrass; if you’re not feeling up to actually prepping lemongrass stalks, you can certainly using some of the pre-prepared lemongrass purees that are available in produce sections around the country. (We’re big lemongrass fans, so I actually used both…)

This isn’t a quick cook, but worth the investment of time, and the prep is uber-simple. A great weekend project, and I’d cook two to enjoy all week…

4-5 lb grass fed chuck roast
Good salt

3 lemongrass stalks (see note above)
2 medium shallots, trimmed and chopped
5 large garlic cloves
3 jalapeno chiles, stemmed, seeded, chopped
2-inch piece of ginger, peeled, finely chopped
1 tbsp + 1 tsp good curry powder
1 can (14-ounces) full fat, unsweetened coconut milk or cream
Optional: 1 tbsp fish sauce

For the gremolata
1/2 cup unsweetened coconut flakes
1 cup cilantro leaves and tender stems, chopped
1 jalapeno or fresno chile, stemmed, seeded, sliced into half rings
2 tbsp fresh-squeezed lime juice (one average lime)
Salt to taste

Preheat your trusty oven to 250.

Trim the uppermost three quarters of the lemongrass stalks off and lay in the bottom on your dutch oven or large cast iron skillet (if using the prepared lemongrass puree, skip this step of course). Salt the chuck roast generously and lay atop the lemongrass.

Blend together the coconut milk, shallots, garlic, jalapenos, ginger, curry, the lemongrass (at least 1 tbsp of the puree if using, grate the bottom quarters of the stalks in otherwise), and the optional fish sauce, puree until smooth. Pour over the chuck roast, and slide into the oven.

Roast at 250 for 3.5 hours; you’re looking for the meat to begin to tenderize, and the liquids to reduce by roughly half. (It will look broken and oily, don’t worry about that). At 2 hours, turn the roast and throw it back into the oven for another 2 hours (maybe even three) until the meat is fall apart tender.

During the last hour, toast the coconut until golden (10-15 minutes), set aside to cool. When cool, combine with the cilantro and sliced pepper; add the fresh lime juice and salt just before serving.

When the roast is done, slice to your tastes and serve hot with the gremolata spooned over the top.

the Older Bolder Life Friday Feast 7 December: Bazinga (Christmas) Chili

I first shared this recipe back in 2011 on a fly fishing blog called Chi Wulff; from that post –

Traditions are a funny thing.

Though admittedly our clan has a fair number of traditions that we more or less cling to with stogged fidelity, some traditions can begin to reek of routine.

And routine has crushed the heart and soul of many a fine man and woman.

So it was with a dumbstruck stare that She Who Must Be Obeyed eyed me after I announced several days ago I thought we should break from tradition this year and serve tamales and chili for Christmas dinner.

As a bit of background, we’re once again entertaining what could be shaping up to be a bizarrely diverse group of friends and fishers who couldn’t be with their own families for the holiday.

SWMBO was probably envisioning a meal of a traditional (there’s the ‘t’ word again) ham with all the trimmings, eaten at a beautifully set and decorated table, complete with fresh flowers, two expertly chosen wines, ruthlessly efficient wait staff and classical music playing softly in the background.

I deftly countered with the fact that this has been a brazenly non-traditional year for us, and that traditions, which are often just dull routines dressed up in their Sunday-go-to-meetin’ clothes, are simply meant to be broken now and again.

Her response…”Bazinga…”

…For a high-brow company meal, have your butcher grind a nice cut (sirloin or tri-tip for us) into a large chili grind and pick up some fresh-made, well-spiced bulk sausage too. This recipe works incredibly well with brisket diced small.

This recipe, at first glance, looks like it uses almost an obscene amount of chili powder – it does call for a fair amount, though most chili powder doesn’t really provide heat – it provides flavor (use a really good, really fresh chili powder). Try it once as the recipe is written and you’ll see what we mean. Just don’t spill any of this deep red treasure on anything white. The touch of brown sugar also softens the bite of the red chile just enough to work a little magic (without breaking the carb budget).

3 lb. London broil, tri-tip, chuck or sirloin ground into rough chili grind or cubed
8 ounces bulk sausage (spicy)
1 large sweet onion, chopped fine
2 tbs avocado oil or EVOO
2-4 cups beef broth
1 8-oz. can tomato sauce (Hunt’s by tradition)
1 can Rotel tomatoes
1 bottle robust beer
11 tbsp commercial chili powder (Spices Etc or Gebhardt’s)
2 tsp garlic powder
1-3 tbsp Tabasco sauce
1 tbsp ground cumin
Kosher salt to taste
Optional: 1-2 tbsp brown sugar

In a large skillet over medium-high heat, heat the oil and then brown the beef (will probably need to do in two batches); then add to your favorite chili pot. Now brown the sausage, breaking it up as you go, then add the onions when about halfway browned; cook until just soft and the sausage is brown. Add to the chili pot.

Now add two cups of the beef broth, bring to a slow simmer. Add the tomato sauce, Rotel tomatoes, beer, 6 tbs of the chili powder, garlic powder, 1 tbs of the brown sugar if using and 1 tbs of Tabasco. Simmer uncovered for an hour and half, stirring occasionally and adding more broth as needed to keep it fairly soupy.

Now add the rest of the chili powder (yep, another five tablespoons), a tsp of salt and the cumin. Taste for sweetness – we like to have just the tiniest smidgen of sweetness as an undercurrent to the heat and other flavors – we almost always end up using 2 tbsp of brown sugar. Keep simmering for at least another 30 minutes.

Now it’s time to fine tune the flavors. Taste for chili flavor, heat, and salt. If your chili powder is wimpy you might end up adding even a bit more chili powder, adjust the hot sauce and salt as well. Reduce or thin to desired consistency.

Serve it up as you see fit; we can’t imagine this without a bit of grated cheese, chopped onion and cilantro, maybe a pepper or two, and a dollop of sour cream.

Older Bolder Foundations: Making the Best Red Meat Protein Choices

For those who have (wisely) chosen to consume animal proteins as a tasty and nutritious component of a rational, healthy eating plan, here are a few (fairly concise) thoughts on making the best red meat protein choices possible.

First, Let’s Clear the Deck of a Couple of Red Meat Protein Issues

One, there’s no question that the anthropological data overwhelmingly supports the fact that early man obtained a significant portion (some say up to 85%) of daily calories from animal foods. It’s also fairly clear that among other nutrients, it was protein and omega-3 fatty acid consumption that facilitated the development of the human brain as document in historical records. Despite what may be passionate arguments otherwise, human physiology appears to require animal-derived proteins to optimally develop and function, particularly when considering the simple math of nutrient and caloric density of various foods.

(For those who can’t conceptually separate issues regarding saturated fats from a discussion of red meat proteins, see discussion here on the Fat Paradigm.)

And of note, for many of us, making the best protein choices can’t be done without casting a responsible and thoughtful look at cost issues. A common criticism (and one not necessarily unearned) of popular ancestral eating philosophies (i.e. Primal and Paleo) has to do with the recommendations to eat organic, grass-fed meat.

Choosing these types of meat products, as opposed to the much more widely available CAFO (Concentrated Animal Feeding Operations) meats clearly does most often cost more, though there are fairly simple ways to address meat quality and cost concerns (like cow-pooling, or ordering meat in larger quantities). The principle clearly is to make the best choices you can within your budget.

Just Say No to CAFO

When speaking of proteins, beef cows in particular are grazing animals and are meant to eat various grasses, not grains and other substandard feeds in CAFO operations. In CAFO operations they’re crowded, often in filthy and what some would define as inhumane conditions, and fed grains and other feed products far, far from their historical diet. In addition, cattle (pigs and poultry as well) are often exposed to hormones (to speed growth), antibiotics due to their filthy living conditions, antacids due to the aberrant feed affects on their guts, and pesticides to control pest infestations.

The answer? Fairly simple – find and purchase grass-fed, pasture-raised red meat products. While it’s arguable grass-fed and grain-finished meat has a bit more marbling, it’s best to review with a grower / rancher how they manage split-feeding to ensure animals are primarily pasture fed and not finished with offensive grains or supplemental feeds.

For those with the inclination and access, the best quality red meat available on the planet is probably wild game harvested ethically and managed in a timely and careful way in the field. My son and his wife living in Montana harvest their own game and 90% or more of the red meat protein they consume is wild elk, venison, and bison.

Making the Best Red Meat Protein Choices

So what are the best array of red meat choices available to us today?

As noted above, the very highest tier of red meat quality would be the lean, tasty, omega-3-rich wild game animal ethically harvested and managed well in the field.

In terms of beef, the top choice would be 100% grass fed/pasture-raised stock from a local grower you can interact with personally. Cow-pooling, sharing a full animal or a side of beef is a great way to dip your toe into the water so to speak. Look around, regional cattle operations are a cinch to find on the web these days.

The next tier choice would be certified organic beef, which is often grass-fed and grain-finished, with the next level being conventionally-raised (likely CAFO) beef. IF budget constraints limited grass-fed beef options, limit fat consumption of CAFO animals as many of the toxins introduced in CAFO operations accumulate in fatty tissue.

In terms of pork, wild pigs are growing in popularity, and if you have the means to harvest one, by all means eat all from nose to tail. Pasture-raised pigs are much less common that pastured beef, but if you look around locally odds are you can find some (pig-pooling works too!).

Lamb is another great option, and at this point in time it appears that while American lamb is generally grain-fed during their life cycle, New Zealand and Australian lamb is typically grass-fed and tasty.

And while not common in much of the United States, here in Texas there’s a fair amount of goat meat produced. Goats are interesting in that they’re what a friend calls ‘very opportunistic browsers’, eating brush, weeds, various leaves (even shrubs), and grass. We have several sources of pastured goat available close by, and there’s more and more available online.

Where’s the Beef? (And pork, lamb, and goat)

Finding a local beef (and other red meats) producer aligned with these objectives can become something akin to a treasure hunt; some useful resources to search out local beef, lamb, pork, and goat in your area include:
