the Older Bolder Life Friday Feast 14 December: Boeuf Bourguignon

This is one of our family’s Holiday season classics, most often making it onto the menu for either Christmas Eve or Christmas Day dinner.

My lovely wife spent time in North Africa and Switzerland growing up, and became something of a Francophile along the way; in fact, those years inspired one of her careers as a linguist and educator.

Her interest in France and French history no doubt inspired our family tradition of enjoying Boeuf at the holiday. While Boeuf Bourguignon unquestionably had its origin as a peasants’ recipe, with food historians tracing its lineage to the Middle Ages, used then as a way to manage tough, less-desired cuts of meat using long, slow cooking and braising methods, through the 20th century it became a bistro favorite and developed an ‘up-town flair’.

Traditional recipes call for browning the beef after flouring; the flour serving both as a browning agent and a thickener for the rich broth that develops in cooking. Those who are gluten-intolerant should of course go without; we almost never use flour in any form, but this is one recipe where, in the big picture, we’re willing to overlook that 1/3 of a cup. You make the call; the same goes for the 2 teaspoons of sugar sprinkled over the onions and mushrooms…

This recipe is quite forgiving, and is probably even better the second or third day as the flavors meld and mature; it even freezes very well, though we never seem to have enough left over to put up for the long haul.

The recipe looks a bit long and complicated, though it’s not and flows very nicely in the kitchen.

4 lb beef chuck, trimmed, cut into 1 and 1/2-inch pieces
1/3 cup flour
2 tsp good salt
2 tsp fresh ground pepper
5 tbsp butter, divided
3 tbsp avocado or EVOO
1/2 lb thick-sliced bacon, diced
5 garlic cloves, peeled, thinly sliced
4 carrots, 1/2-inch diagonal slices
2 leeks, white and light green parts only, coarsely chopped
1/2 cup fresh parsley, chopped
3 bay leaves
3 sprigs fresh thyme
1 tbsp asian fish sauce
1 tbsp soy sauce
2 cups burgundy wine (maybe more)
Beef broth (one quart container should do, see below)
20-30 small white pearl onions, trimmed and skins removed
1 lb mushrooms, mixed, sliced thickly
3 tbsp butter
Juice of one lemon
2 tsp sugar
1/4 cup fresh parsley, optional

Preheat your trusty oven to 350.

Dredge the meat in the flour, salt, and pepper; heat 2 tbsp butter and one tbsp oil of choice in a large skillet. Sauté one-third of the meat until browned on all sides, remove to a dutch oven or large, heavy roasting pan and repeat two more times.

Now into the same skillet, add the bacon and sauté for several minutes until the fat begins to render; then add the garlic, carrots, leeks, and 1/2 cup parsley. Cook, stirring frequently, until the bacon is cooked through and there’s a bit of caramelization on the vegetables. Add the bay leaves and thyme, stir in, then dump the bacon mixture into the dutch oven/roasting pan with the beef.

Now add the wine and enough broth to just cover the meat, then the soy and fish sauces, adjust for salt, cover, and then into the oven for 90 minutes, checking halfway through to see if more broth/wine is needed.

Take a break for an hour, then sauté the prepped onions and mushrooms in 3 tbsp of butter until lightly browned,  sprinkle with the lemon juice and sugar, cooking and stirring for another 3 minutes or so. Add the mushroom-onion mixture to the beef, stir it in, then cover again and cook for another hour (or more) until the beef is fall apart tender.

Remove from the oven, let rest 10 minutes, skim any visible fat and remove the bay and thyme leaves. Adjust for salt and pepper, and serve hot with more fresh chopped parsley.

Cookbooks

I happen to have a vehement bias about cookbooks these days.

Having been a Primal guy now for going on three years and a Keto guy going on ten months, and being a lifelong foodie, I love to cook creative, interesting, and fun meals though do so entirely within a healthy framework now.

My bias mentioned above? Personally I’ve found most ancestrally-oriented cookbooks published over the past few years to be somewhat limited (read bland and repetitive for lack of a better word right now) from a culinary-interest standpoint, though that game is changing.

Cookbooks are a great gift; choose wisely targeting your recipient’s interests, palate, and skills. More on cookbooks to come…

the Older Bolder Life Vegetable Wednesday 12 December: Dutch Oven Roasted Beets

This time of year we’re roasting more vegetables in the oven; it just seems to fit late fall – early winter weather and schedules these days.

One of our favorites are these delicious Dutch Oven Roasted Beets with a sprig of rosemary; it’s ridiculously simple though takes a bit of time to finish (a couple of hours).

You can use beets of any color, and any size for that matter, though note that larger beets take longer to roast, and if you mix sizes of beets in your roasting batch, you may need to remove the smaller beets as the larger ones finish roasting.

Beets offer a host of health benefits, though are often eaten in moderation given their carbohydrate content. The nitrates in beets, converted into nitric oxide in the body, are how most experts explain beets’ blood pressure lowering and exercise tolerance improvements, and beets provide betaine, which moderates inflammation and lowers homocysteine (higher levels are associated with cardiovascular and cerebrovascular disease) . Of course beets are packed with phytonutrients too.

Though beets offer impressive amounts of fiber, vitamin C, potassium, manganese, magnesium, and folate, we like them because they taste so good.

4 pounds of fresh beets, any color, 4-inches or under
2 tbsp avocado oil

Optional: Sprig or two of rosemary

Preheat your trusty oven to 425; brush the inside of your Dutch oven with the avocado oil.

Trim all but about 2-inches of the beet tops off; leave the beet tails intact (pull off any long, stringy fibers). Scrub the beets very well under running water, but leave the skins intact.

Place the prepped beets in the bottom of the Dutch oven in a single layer; it’s fine if they’re touching. Add a sprig or two of rosemary if desired. Cover with the DO lid and place in the oven.

Turn the beets over every 40 minutes; at the second turn (80 minutes), test for doneness by piercing the beets with a wooden skewer. If the skewer penetrates the beet easily and smoothly passes to the center of the beet, the beet is cooked through. Note that smaller beets cook faster; if you have some smaller and some larger in the batch, remove the smaller beets are they’re cooked. Test every every 10-15 minutes after the 80 minute mark, cook until tender.

Remove from the oven, let cool 15-20 minutes, then trim the tops and roots/tails, and scrub the skins off under running cold water. Watch that beet juice – it stains everything!

There are a host of ways to serve these, use your imagination and go to it; most often we’re reheating in butter in a saucepan and digging in.

Seminal Fat Article: Is Dietary Fat Foe or Friend?

Now and again a truly seminal article pops up in the literature; we’ll be posting citations of particular interest to we in the Older Bolder crowd as they come across our radar.

This one – Dietary Fat: From Foe to Friend? – published last month in Science (Science 16 Nov 2018:Vol. 362, Issue 6416, pp. 764-770), authored by David S. Ludwig, Walter C. Willett, Jeff S. Volek, and Marian L Neuhouser is one of those seminal pieces worth your time.

The authors take a concise look at the origins of the “reduce fats and increase carbohydrates” recommendations from purported authorities (dating in the piece back to 1977), and the resultant impacts on American health, while recognizing that correlation versus causation is open for debate, particularly given the plethora of factors impacting outcome and the lack of controlled, large human studies.

It’s most interesting to read their contrasting “The case for a low-fat, high-carbohydrate” and “The case for a low-carbohydrate, high-fat diet” sections, as well as the detailed arguments for dietary fat quality.

Their opening paragraph in the conclusion is worth noting (emphasis mine) –

The optimal proportion of carbohydrate to fat in the diet for obesity treatment and chronic disease prevention has been a topic of debate for decades, often generating more heat than light (101). Of course, any meaningful assessment of a diet’s impact on health must extend far beyond macronutrient quantity, to include the myriad qualitative aspects of food and food combinations that influence hormonal response, gene expression, and metabolic pathways. Further complicating this issue is the likelihood that inherent or acquired biological differences among individuals or populations, especially related to glucose homeostasis, affect response to specific diets.

The authors take care to note nine current controversies surrounding dietary fat, and appropriately call for further well-designed, thoughtfully controlled research in these arenas.

They also go on to list seven points of consensus, again from the article –

1. With a focus on nutrient quality, good health and low chronic disease risk can be achieved for many people on diets with a broad range of carbohydrate-to-fat ratios.
2. Replacement of saturated fat with naturally occurring unsaturated fats provides health benefits for the general population. Industrially produced trans fats are harmful and should be eliminated. The metabolism of saturated fat may differ on carbohydrate-restricted diets, an issue that requires study.
3. Replacement of highly processed carbohydrates (including refined grains, potato products, and free sugars) with unprocessed carbohydrates (nonstarchy vegetables, whole fruits, legumes, and whole or minimally processed grains) provides health benefits.
4. Biological factors appear to influence responses to diets of differing macronutrient composition. People with relatively normal insulin sensitivity and β cell function may do well on diets with a wide range of carbohydrate-to-fat ratios; those with insulin resistance, hypersecretion of insulin, or glucose intolerance may benefit from a lower-carbohydrate, higher-fat diet.
5. A ketogenic diet may confer particular metabolic benefits for some people with abnormal carbohydrate metabolism, a possibility that requires long-term study.
6. Well-formulated low-carbohydrate, high-fat diets do not require high intakes of protein or animal products. Reduced carbohydrate consumption can be achieved by substituting grains, starchy vegetables, and sugars with nonhydrogenated plant oils, nuts, seeds, avocado, and other high-fat plant foods.
7. There is broad agreement regarding the fundamental components of a healthful diet that can serve to inform policy, clinical management, and individual dietary choice. Nonetheless, important questions relevant to the epidemics of diet-related chronic disease remain. Greater investment in nutrition research should assume a high priority.

Well worth a read, and we’ll be diving into several of these key points in much greater detail in the upcoming months.

I’m old enough to remember my grandmothers bolting big, cast-iron grinders to a table edge and grinding their own beef and pork for burgers, sausage, and more. I’d give just about anything to have one of those older, classically-made hand-crank grinders as a memory piece…

Grinding your own ground meat at home is a cinch, and you retain absolute control over what goes in your grass fed burgers and sausage. It’s quite easy to spend hundreds on a home meat grinder, though here are a couple of entry level grinders (the Galaxy 400 above and a smallish Weston) that will let you get in the grinding game without investing much.

Worth it to upgrade your home sausage game in particular.

Jump into Sous Vide with the Joule

For a variety of reasons we were a little slow to jump on the home sous vide movement, though chef friends have been wowing us for years with their perfectly cooked steaks, prime rib, chicken, pork roasts and tenderloins (and more) prepped via their commercial sous vide units.

If you’re not familiar, sous vide cooking is done by immersing a sealed bag with the food of your choice in a water bath that’s controlled at a very consistent and low temperature; proteins are then usually quickly browned over fire, under a broiler, or on a hot cast iron pan (or griddle).

Digital courses, at least most of them, are multimedia bonanzas, using print, images, video, and more to convey their offerings.

The best I’ve taken personally this year? The Keto Reset Mastery course from our friends at the Primal Blueprint. Worth every penny, and has contributed greatly to making my own keto journey a joy.

Give the Gift of Organization

As I’ve shared before, for decades I’ve personally tried a host of different tools to help organize and structure my time, thinking, effort, and schedule, finally adopting (very happily and successfully I might add) David Allen’s Getting Things Done approach.

There’s a wonderful software program that’s been cobbled together that facilitates this approach greatly – read about Omnifocus here.

I’ve been very surprised this year at the number of inquiries we’ve had about giving the gift of health coaching to friends and family who’ve expressed an interest in being shepherded along in their respective health and wellness journeys.

Books, Books, and More Books

One of my family’s favorite gifts to give every year has always been books. We’re voracious readers, reading in what some might call eclectically diverse topic areas, from a wide spectrum of authors, and ranging from just-published to obscure classics. (Between my wife and I, we typically read 100-120 books or more per year.)

Thinking about it just now, I’d have to say the most impactful health and wellness read for me this year has been Steven Gundry’s The Plant Paradox, and I’ve just laughed my way through Rick Bragg’s My Southern Journey – True Stories from the Heart of the South.

the Older Bolder Life Salad Sunday 9 December: Chile Lime Vinaigrette

There are a gazillion recipes for good vinaigrettes out there; we seem to stir or whisk up a vinaigrette four or five nights per week these days.

Of all the recipes we enjoy, this Chile Lime Vinaigrette is probably my personal favorite and one that we serve on a simple slaw (green and a little purple cabbage, thinly sliced green or red onions, maybe some grated carrot or beet, slivered bell pepper, and pending the protein, usually a handful of cilantro leaves) at least once a week.

Though it’s typically a tad more than 3 tablespoons, I always count on using two limes, and pending how spicy the chile paste (or garlic chile paste) jar happens to be this time around, may use a bit more to spice things up.

This vinaigrette not only plays well on slaws and salads, but roasted vegetables and even occasionally as a dipping sauce for roasted or grilled chicken and more.

The brown sugar is of course optional; even the 1/2 teaspoon adds just the tiniest hint of sweetness that adds to the flavor package here.

1/4 cup avocado oil (or EVOO)
3 tbsp fresh lime juice
2 tbsp rice wine vinegar
1 tbsp good fish sauce
1 tbsp fresh chile paste or chile garlic paste
3/4 tsp salt (or more to taste)

Optional
2-3 tbsp chopped cilantro leaves
1/2 tsp brown sugar

This one couldn’t be easier. Combine the first six ingredients in a small bowl and whisk to combine, pour over your slaw, salad, or vegetables. Best made right before use.

the Older Bolder Life Friday Feast 7 December: Bazinga (Christmas) Chili

I first shared this recipe back in 2011 on a fly fishing blog called Chi Wulff; from that post –

Traditions are a funny thing.

Though admittedly our clan has a fair number of traditions that we more or less cling to with stogged fidelity, some traditions can begin to reek of routine.

And routine has crushed the heart and soul of many a fine man and woman.

So it was with a dumbstruck stare that She Who Must Be Obeyed eyed me after I announced several days ago I thought we should break from tradition this year and serve tamales and chili for Christmas dinner.

As a bit of background, we’re once again entertaining what could be shaping up to be a bizarrely diverse group of friends and fishers who couldn’t be with their own families for the holiday.

SWMBO was probably envisioning a meal of a traditional (there’s the ‘t’ word again) ham with all the trimmings, eaten at a beautifully set and decorated table, complete with fresh flowers, two expertly chosen wines, ruthlessly efficient wait staff and classical music playing softly in the background.

I deftly countered with the fact that this has been a brazenly non-traditional year for us, and that traditions, which are often just dull routines dressed up in their Sunday-go-to-meetin’ clothes, are simply meant to be broken now and again.

Her response…”Bazinga…”

…For a high-brow company meal, have your butcher grind a nice cut (sirloin or tri-tip for us) into a large chili grind and pick up some fresh-made, well-spiced bulk sausage too. This recipe works incredibly well with brisket diced small.

This recipe, at first glance, looks like it uses almost an obscene amount of chili powder – it does call for a fair amount, though most chili powder doesn’t really provide heat – it provides flavor (use a really good, really fresh chili powder). Try it once as the recipe is written and you’ll see what we mean. Just don’t spill any of this deep red treasure on anything white. The touch of brown sugar also softens the bite of the red chile just enough to work a little magic (without breaking the carb budget).

3 lb. London broil, tri-tip, chuck or sirloin ground into rough chili grind or cubed
8 ounces bulk sausage (spicy)
1 large sweet onion, chopped fine
2 tbs avocado oil or EVOO
2-4 cups beef broth
1 8-oz. can tomato sauce (Hunt’s by tradition)
1 can Rotel tomatoes
1 bottle robust beer
11 tbsp commercial chili powder (Spices Etc or Gebhardt’s)
2 tsp garlic powder
1-3 tbsp Tabasco sauce
1 tbsp ground cumin
Kosher salt to taste
Optional: 1-2 tbsp brown sugar

In a large skillet over medium-high heat, heat the oil and then brown the beef (will probably need to do in two batches); then add to your favorite chili pot. Now brown the sausage, breaking it up as you go, then add the onions when about halfway browned; cook until just soft and the sausage is brown. Add to the chili pot.

Now add two cups of the beef broth, bring to a slow simmer. Add the tomato sauce, Rotel tomatoes, beer, 6 tbs of the chili powder, garlic powder, 1 tbs of the brown sugar if using and 1 tbs of Tabasco. Simmer uncovered for an hour and half, stirring occasionally and adding more broth as needed to keep it fairly soupy.

Now add the rest of the chili powder (yep, another five tablespoons), a tsp of salt and the cumin. Taste for sweetness – we like to have just the tiniest smidgen of sweetness as an undercurrent to the heat and other flavors – we almost always end up using 2 tbsp of brown sugar. Keep simmering for at least another 30 minutes.

Now it’s time to fine tune the flavors. Taste for chili flavor, heat, and salt. If your chili powder is wimpy you might end up adding even a bit more chili powder, adjust the hot sauce and salt as well. Reduce or thin to desired consistency.

Serve it up as you see fit; we can’t imagine this without a bit of grated cheese, chopped onion and cilantro, maybe a pepper or two, and a dollop of sour cream.
