the Older Bolder Life Friday Feast: Southwestern Hot Chicken Salad

This Southwestern Hot Chicken Salad (great with turkey too) is based on one one that’s been part of our family food lexicon for years now; this version amps up the spice and flavor a bit with the addition of Mediterraneo Dulce and poblano peppers and (usually) 4 to 8 ounces of roasted, diced green chiles too. Packed with lots of crunchy vegetable goodness, we stir this one up now without digging the recipe out, typically throwing in whatever we have on hand.

The original recipe we were given for this dish was topped with cheese (by all means don’t add it if you’re not doing dairy – we’re happy and healthy Primal enthusiasts, so include it) and then crushed potato chips. As we’ve revamped all of the family favorite recipes to be healthier over the years, topping this dish with sliced almonds is far better than the potato-chip crowned version.

This is comfort food supreme, and not at all a complicated dish to stir together and slide into the oven on short notice. It reheats very well by the way, we never finish an entire recipe ourselves, and find it reheats best in the oven (350, 25-30 minutes) versus the microwave.

3 cups (+) cooked chicken, white and dark meat, cut into 1/2 inch pieces
2 medium Mediterraneo Dulce peppers, stemmed, seeded chopped
2 medium poblano peppers, stemmed, seeded and chopped
1 medium bunch celery including leaves, trimmed, sliced on the diagonal
1 small sweet onion or 2 shallots, trimmed and chopped small
1/2 cup diced pimento
1/2 cup sliced green olives (or more)
1 cup avocado or olive oil mayo
2 tbsp fresh lemon juice
Salt and pepper to taste
2-3 cups medium Cheddar or Monterrey Jack cheese, grated
1 cup sliced almonds (or more)
1-2 tbsp. paprika

Optional
Sliced water chestnuts
1 cup frozen peas
4-8 ounce can roasted, diced green chiles

Preheat the oven to 350.

Cut up the chicken and place in a large bowl. Add chopped peppers, celery, onion (or shallots), diced pimento, green olives, and if using – the water chestnuts, frozen peas, and green chiles. Now stir in the lemon juice and mayo, then season to taste with good salt and pepper.

Spoon into a 13 x 9 baking dish, sprinkle with the grated cheese then the sliced almonds. Top it all off with a healthy shake of a good paprika.

Now into the oven for 30-40 minutes until the cheese is gooey and melted, the almonds are toasty, and it’s bubbling around the edges.

Serve hot with a generous splash of your favorite hot sauce; reheat on a foil or parchment-lined baking sheet for 20-25 minutes if there’s any left over.

Enjoy.

KISS Your Food Plan This Week

Spend any time on Instagram these days following folks in the Primal, paleo, keto, and other health and wellness arenas where thinking about food is a big part of the game, and you might get the idea that to eat well you’re going to spend hours in the kitchen prepping elaborate meals every day.

In reality nothing could be further from the truth.

One of the reasons we love eating a primal-aligned food plan is that, on most days, meal planning is simple, intuitive, damned tasty, efficient, and almost always a pleasure.

Oh sure, there will be days when you invest more time and effort in crafting an elaborate kitchen masterpiece worthy of the Instagram masters, but for the day in and day out routine, eating – and cooking – healthy food just doesn’t have to be that complicated.

The image to the right is a great example, these blackened mahi tacos (frozen mahi fillets from Costco) over our house guacamole in romaine leaves were fridge to plate in under twenty minutes; my wife was even traveling in Vermont last week when I made these and not available to serve as sous chef.

You’ve no doubt seen the bacronym KISS: Keep It Simple, Stupid, which was a favorite of a mentor and business partner of mine back in Salt Lake City years ago (he was also know to wax eloquently on Occam’s razor as well – simpler solutions are more likely to be correct than complex ones).

In particular if you’re new to the Primal/paleo/Whole30/keto game, don’t get distracted by the elaborate food preps you see trotted by every day on social media. Keep it simple, keep it practical, keep it intuitive, and have fun with your food plan.

Two Prime Examples of A Traditional Medical Swing and A Miss: Practice Guidelines for T2DM and Obesity

As a former clinical physician I’ve always been fascinated by the promulgation of clinical guidelines, ostensibly crafted by leading minds in a given field convening to articulate treatment and diagnostic pathways to follow based on, what we’d all presume to be at least, the latest and greatest empirical evidence.

The overwhelming challenge is of course that human pathophysiology varies widely from person to person, given their unique genetics, history, constellation of conditions, nutrition, and even behavior. One-size-fits-all guidelines are often somewhat muddled in real-world application, and can lead to inappropriate, sub-optimal, or even harmful treatments being offered.

I personally know physicians who would be offended at the paragraph above, yet examples are stunningly commonplace of clinical guidelines run amuck today. For example, I have an 86-year old family member who’s currently being pressed to take statins for an incorrectly interpreted lipid panel, with her internist refusing to pursue the most specific testing, reporting it’s not allowed in his employer’s guideline directives.

For further example, here are two clinical guidelines released in the past few weeks that miss the mark impressively.

From Canada, T2 Diabetes Clinical Practice Guidelines for Physicians

From the Canadian Family Physician, Diabetes Canada 2018 Clinical Practice Guidelines, was published in January, detailing an intensive and comprehensive, pharmacologically-focused treatment pathway with stunningly little discussion of dietary guidelines focused on rational management of carbohydrate intake.

The article was presented on MedScape here (free account required); as always the comments were illustrative (and saddening), with one RN insisting that T2DM is best managed by increasing complex carbohydrates and limiting protein, a stunningly incorrect approach. Critically these articles referenced failed to address diet/nutrition in any detail, which has been increasingly shown to be impressively effective in management of T2DM.

Obesity Management in Primary Care

The second example is this: European Practical and Patient-Centred Guidelines for Adult Obesity in Primary Care.

The recommendations are multi-faceted and listed in some detail; they to their credit suggest pursuit of a “typical balanced Mediterranean style diet”, though suggest that at least of quarter of caloric intake come from starchy foods including cereals, legumes, and grains, with robust consumption of fruits as well, despite ample evidence suggesting these very foods can be obesogenic for many.

Of particular interest are the recommendations regarding targeted weight loss objectives (5-10% weight reduction), which while helpful would be woefully inadequate for many, and the responses on the Medscape summary of the guidelines, including one physician claiming the obesity epidemic to be unstoppable/untreatable.

The Take Home: Don’t Be Distracted By One Size Fits All Guidelines

Two Points of Interest. First, one-size-fits-all clinical guidelines, whether written by the AMA (or some other bastion of traditional medicine) or your favorite alternative health guru, need to be interpreted for you personally with great care.

Some recommendations you’ll come across, like the two examples above, have such glaring foundational flaws (missing fundamental nutrition and diet principles), one doesn’t have to venture too far out on the proverbial limb to suggest genuine harm is being done to many as they’re overmedicated, passing time waiting for complications of their lifestyle ‘diseases’ and treatments to manifest.

Some recommendations you’ll come across, and I’m thinking social media driven “advice” here, touting magical ingredients, supplements, workouts, etc, are not only anecdotal, but occasionally frankly duplicitous, evening bordering on the absurd. The keto world on social media is a hotbed of “experts” right now, prompting Mark Sisson to even refer to folks doing “caricature keto” in this post covering The Curious Phenomenon of Keto Crotch.

You physiology is unique to you; pay attention to what your body is telling you, and find supporting team members, including a good physician(s) when needed, who are willing to do the same.

And secondly, when anyone offers you recommendations based upon their guidelines, it’s absolutely fair game to apply several common sense tests: Do the recommendations make sense? Do the recommendations start with the least risky intervention or activity? What potential risks (or comorbidities) are involved?

An easy example – it’s my opinion that treating T2DM with pharmacological agents without a well-thought out, well-designed interval in a low carb (or VLC) diet trial is, given the information available today, clearly inappropriate. Another easy example is the liberal use of statins in clinical practice today, without adequate trials of dietary modification, particularly given statins’ long list of problems/side effects and questioned efficacy in reducing all-cause mortality in populations without proven heart disease, the risks very well may outweigh the benefits (more on statins to come another day).

the Older Bolder Life Tuesday Veg 12 March: Our House Chimichurri

A few years back we lived in a suburb of Austin for a couple of years (Lakeway), and there a wonderful Argentinean eatery happened to reside across the street from my wife’s office (the Buenos Aires Cafe).

The proprietress was a delightful and somewhat bashful women, a master chef with a wonderful palate, who graced every table with a freshly prepared container of her house chimichurri. It was simple, though with layers of flavor, from the herbal parsley to the heady, pungent garlic to the bite of aged red wine vinegar.

Over the years we played with several chimichurri recipes, and finally went in and begged her to share her recipe; she listed these from memory and left us to wiggle around to find the amounts.

I like to prep this one by hand; even though a food processor is faster, it just doesn’t seem to taste quite as good to us, though that might just be an irrational bias that comes from playing with our food too much.

It gets better with time, though when I make a batch, it never seems to last more than a few days. Today’s batch will be drizzled over pan-seared shrimp tonight…

1 cup fresh parsley leaves, chopped
½ cup fresh cilantro leaves (tender stems too), chopped
1 generous tbsp. fresh oregano leaves, chopped
2 green onions, white and green parts, sliced thin
5-6 medium cloves garlic, minced
1/2 tbsp. fresh lemon zest
¾ cup extra virgin olive oil (or avocado oil)
¼ cup red wine vinegar
½ to 1 tsp. Kosher salt, adjust to taste
½ to 1 tsp. red pepper flakes, adjust to taste

I love to grab a chef’s knife and prepare this by hand (it’s great for your knife skills), though the food processor speeds the process a bit. If using your trusty food processor, combine the first six ingredients and the vinegar and pulse to chop fine.

Now make a sauce. Now whisk in the olive or avocado oil (or drizzle into running food processor).

Finish it up by whisking in the salt, red pepper flakes and even a grind or two of fresh black pepper.

Enjoy.

Question of the Day: Fitness Pursuits and Longevity

I was at an event yesterday in the DFW metro where the question came up as to “what’s the very best fitness activity to promote longevity?”

Anytime someone throws out opinions about the very best anything related to individual health, physiology, and wellness, the little man holding the red flags in my head jumps up and starts waving like mad. Why? Because the very best anything (food, nutrition plan, exercise, etc) for a given individual depends of course on their specific health, wellness, fitness, metabolism and physiology, and even their beliefs and biases at the time.

That said, I shared a two-part answer to the question…

Physical Activity and Longevity in the Copenhagen City Heart Study

It just so happens that this week I came across this study in the Mayo Clinic Proceedings detailing the associations between various leisure-time physical activity pursuits and varying life expectancies in the study group.

The Copenhagen City study was a fairly robust one, following almost 9000 participants longitudinally over a span of up to 25 years for all-cause mortality.

The study was of course an observational one, meaning causality can’t be established, though in the analysis participants playing tennis gained 9.7 years of life expectancy compared to the sedentary group. Badminton aficionados gained 6.2 years, soccer players 4.7, cyclists 3.7, swimmers 3.4, with those pursuing “health club activities) following along at 1.5 years of life expectancy extension compared to sedentary folks.

The full study is behind a paywall and inaccessible for quick review; there are of course a number of questions raised by the conclusions drawn (diets, comorbidities, etc), including the authors’ inference that leisure-time sports with greater social interaction appear to be associated with greater longevity.

So should we all pick up tennis and badminton racquets after 40? Perhaps, though I’d argue there’s one fitness pursuit almost anyone can pursue at some level, and that probably offers the easiest to access longevity benefit for most of us…

Lace Up Those Walking Shoes

Count me among those prone to argue that walking, simple walking, something that most of us can readily incorporate into even a busy daily routine, may very well be “the best” fitness activity to promote longevity.

Back in July I looked at the debate of health benefits accrued from Walking vs. Jogging, and referenced a number of studies looking at health benefits from walking.

For example, even modest walking, done consistently, has been shown to invoke risk reductions for hypertension, diabetes mellitus, and hypercholesterolemia. Men in the 65-74 band experienced a reduction in all-cause mortality, increasing the more they walked. Even moderate walking was effective at improving glucose tolerance in a group at risk for T2DM. There are more links out to supporting data in the July post above, including several looking at injury rates in runners vs. walkers.

Bottom line, hacking longevity is a hot topic these days, and a fun one to ponder (now and then anyway). That said, unless one is willing to pick off the low-hanging fruit here – optimizing your diet, getting good sleep, managing stress, developing solid baseline fitness at least – jousting over the very best fitness pursuits via which to live long and prosper is probably barking up the wrong tree.

the Older Bolder Life Friday Feast: New Mexico Red Spice Rub No. 1

Earlier this week I posted on Instagram a pic of a quick dinner one afternoon, a blackened mahi fish taco over our house guacamole in romaine “boats”; several people emailed to ask about the spice mixes we use…

In part due to growing up in the Texas Panhandle and escaping often to nearby New Mexico to hike, camp, and ski growing up, and in part due to the fact that New Mexico offers a wonderful, and very unique, regional cuisine to those willing to invest some time learning about it, we’ve long been fans of New Mexico’s spicy food culture.

One of the things we’ve worked on over the years is developing spice mixes featuring New Mexico’s great array of chiles; this New Mexico Red Spice Rub No. 1 is our version featuring the Chimayo red chile (though you can of course use whatever red chile powder you have on hand).

This is outstanding with fish, chicken, or pork (trying a slow roasted pork shoulder slathered in this), and we even occasionally use it in places you wouldn’t necessarily expect, as in flavoring a vinaigrette or even sprinkle over scrambled or deviled eggs.

3 parts good New Mexico chili powder (Chimayo)
2 parts sweet paprika
1 and 1/2 parts ground cumin
1 part granulated garlic
1 part granulated onion
1 part freshly ground black pepper
1 part good salt (kosher salt)
1/2 part dried (Mexican) oregano
1/2 part chipotle powder
1/2 part ground coriander

This one couldn’t be easier, mix the dry ingredients well in a small bowl. Stir tightly sealed in a cool, dark place, and use generously.

Hanger steaks, like their kissing cousins skirt steaks, derive from the diaphragm though are much more tender and flavorful than skirt - which is still our favorite #fajita cut on the planet. I put this bowl together last weekend before heading down to Austin with our Asian Fried Cauliflower Rice; hot damn, was it tasty. And it’s a simple prep and cook to boot.
