Question of the Week: Living a Demanding Life

In response to yesterday’s post briefly explaining my absence from the blog here on the Older Bolder Life for a few weeks, reader Paul offered this comment / question –

And there in lies the rub. How do advise your clients who live demanding lives and want to remain healthy? I am on tour for 3 months with an outdoor show and I can tell you the diet is the first thing to go.

Upon seeing Paul’s comment early this morning, my initial response was “what a great question”, and it resonates very well with commentary I hear literally almost daily from friends, clients, and family. After thinking about it for a minute, I thought it worthy to respond in a bit more detail, channeling (at least attempting to anyway) what I’d say to Paul if we were sitting in the coffee shop (or a drift boat on the river) enjoying a break and a cup of hot coffee. During that hypothetical conversation I’d offer up the following points…

Real Life Happens (Almost Every Damned Day) In Ways We Hadn’t Planned For

Most of us, at the least the people that I run with and help through Older Bolder, have to work for a living to pay bills, buy groceries, keep a roof over the family’s head, and educate the occasional offspring. Work tasks often vacuum up huge chunks of time as well as physical, emotional, and cognitive resources we’d prefer to spend in other places, doing other things.

I get that point, and understand damn well that real life rarely proceeds according to the plans we’ve laid out – whether it’s for the day, week, year or whatever time frame you’d care to define. (Working in medicine, it was absolutely guaranteed that urgencies and emergencies would interrupt every single day – it wasn’t a matter of would it happen, it was just a matter of when).

Some changes in the daily life game are more or less voluntary, like my excursion into the world of a commercial kitchen laid out yesterday; many (perhaps most) bumps along life’s scheduling road are simply out of our control.

One of, and by no means the only one, the key points to be made here responding to Paul’s comment is this – there will always be daily challenges and obstructions to living the healthiest lifestyle we can. Some days (weeks, or even months) we win the battle, some days it’s a draw, and some days we get hit below the belt and stumble. It happens, and will happen again to all of us.

How we prepare for, and respond to those eventualities, is where we all have, at least in my humble opinion, the greatest opportunity – and like most things in life, making the most out of those opportunities requires sharpening a few skills…

Hone the Art Being Brutally Objective About Yourself

As I shared yesterday, I got into a bit of trouble physically last quarter because I really wanted to learn the ins and outs of working in an upscale, busy, creative commercial kitchen. Of the many lessons I learned, one was this – there’s a reason you don’t see a lot of 60+ year olds in busy restaurant kitchens. The work is fast, even furious at times, and often amazing physical. As much as a I really really wanted to dive in and do that, given the bundle of other business and family responsibilities I have on my plate (as do we all), it took me a while to listen to my wife and objectively measure the pros and cons of my little adventure.

Like most humans walking the planet today, I had developed a bit of a blind spot that allowed me to wander down a path that ultimately wasn’t the best one for me now, and like most of us, there was a price to be paid. Being objective about things we need to face up to in our lives can be damned hard – things like am I over-working, overweight, eating or drinking the wrong things, under or over active, and so on so forth.

Hone the art of being brutally objective about yourself, and find a partner, mentor, or friend who will pull alongside and steer you back to reality.

When Sh*t Happens, Flex and Pivot

When life throws those curve balls, sometimes we need to flex and / or pivot. For example, when I found my activity demands changing rapidly, and after struggling for a few weeks, I began to fiddle with my macros (upping carbs and good fats) in response. Flexing my macros and my eating schedule (I’m a long time time restricted feeding fan) made significant improvements; one of the most interesting parts of health and nutrition game is that sometimes we all have to run that N=1 experiment to see how we can make this human machine run optimally.

Sometimes we need to pivot; for sake of discussion here I’m using pivot to denote making a bigger change for our long term good. Sometimes making a pivot means leaving the good behind for the better ahead.

Metabolic Flexibility Still Wins the Day

At least from where I sit, the absolutely most critical thing anyone can (and really should) do to improve their health and function in life is to develop a robust ability to be metabolically flexible.

For sake of discussion here, let’s define that as developing the metabolic machinery (hello mitochondria!) to process multiple substrates to provide energy for our daily function, namely the fats we all so efficiently and amply store, and not just exist from one glucose spike to the next, stuffing our faces with fast-burning carbs every two hours every danged day.

Being metabolically flexible brings a host of benefits to the table, though I’d argue that top of the list is experiencing more even, sustained energy production, effortlessly by the way, which opens up a whole new world of ability to complete life tasks – actually doing things every day – which is what life is all about.

Developing metabolic flexibility is within the reach of just about every human on the planet, but you’ll have to be intentional about it, and be willing to spend a bit of time in nutritional ketosis.

Functional Fitness Still Matters

Another point I’d make to Paul in response to his question is so simple as to be in essence common sense – the point being that functional fitness really does matter.

All of us, regardless of age, need varied, interesting, and sustainable exercise that promotes strength, endurance, cardiovascular condition, and flexibility. What does that look like for you? YOU get to decide what your program looks like; and you don’t have to spend thousands on gyms, gear, or coaching to get it done, you just have to do it.

Functional fitness still matters, and always will; figure out how to make it a non-negotiable part of your day and week. (Think you don’t have time? How much screen time do you spend waste each day?)

Mind the S’s (Stress and Sleep)

Though it occasionally garners an eye roll from coaching clients, I’d gently remind Paul that many of us, due to the demands of the day, neglect managing stress and sleep. These are big topics, bigger than space and time allow for deep exploration here, but suffice it say that unmanaged stress and disordered or too little sleep can have profound impacts on health and wellness.

Two Final Thoughts…

Finally, I’d close my hypothetical chat with Paul with these two encouragements. One, life can, at times, be a bitch, throwing us curve ball after curve ball that we can’t hit. Relish the victories, dust yourself after the losses, and get back in the game. Sisson opines that we should strive for 80% compliance with a healthy lifestyle; I’d argue 90% or better is just as easy and still allows for that occasional stumble.

And two, always be exploring, learning, and testing. There’s a wealth of great free information available today at your fingertips, experts to query, and consultants to engage. Ask questions, experiment, make changes in your diet and routine, and pay damned close attention to what your body is telling you. It’s NEVER too late to make changes that will lead better health and rewarding function.

Where I’ve Been…

For the past several months I’ve been posting sparingly here on the Older Bolder Life. Late last fall an opportunity arose that I wasn’t counting on – don’t some of the most interesting opportunities in life evolve that way?

It wasn’t my intent to significantly curtail my posting here on the blog, and it’s great to be back in the saddle so to speak now. The story of the last quarter is somewhat interesting from a fitness, health, and performance standpoint, and I’m happy to share at least a quick introduction now.

As it turns out mid-August of last year some new friends were working hard to open a new Cajun-themed restaurant near home; long time readers of the Older Bolder Life know that I’ve shared on a number of occasions my love of cooking. My son and I, encouraged by friends and family over the years, have in fact toyed with the idea of opening our own restaurant from time to time, and now and again I ponder what life would have been like had I pursued a vision (some years back) of training to become a chef.

When an opportunity arose to help my new friends get their operation off the ground, and with the intent of taking a deep dive, behind the scenes, deep immersion into the world of restaurant cooking, I jumped at the chance.

My original intent was to help them out on a part time basis, working 2-3 days per week until they got their operation up and running. I jumped in, trained with the kitchen and fledging front crew for several weeks, and then as construction finished up, we dove headfirst into what became a dizzying kitchen schedule.

Soon my hours accelerated up to 50-60 per week; it was profoundly educational, fun most of the time, and surprisingly physical.

At that point in time, I had been fairly comfortably eating a keto-focused food plan for almost 18 months, typically using a restricted feeding window every day, holding carbs to around 25-30 grams per day, and working out aggressively.

Given the physicality of the new work routine, by late September some interesting challenges arose, induced in part by (in retrospect) at least a tripling of my physical activity output on a daily basis. I’ll address this window of time in more detail in posts down the road, but I began to have genuine trouble completing the rigors of the day without increasing carb and fat consumption (for several reasons I worked hard to keep my protein intake fairly constant) on a consistent basis.

In part related to the physicality of the work, in part to my dietary changes, and no doubt in part due to a bit of increased stress as I fiddled with these unanticipated time demands, generalized inflammation – which had all but resolved for me, both from a symptomatic/clinical and blood chemistry standpoint – flared to the point that inflammatory pain began to consistently impact my ability to comfortably function. My experiment in deep immersion, commercial kitchen education began to yield impacts that limited by function outside the kitchen work space – including curtailing my long-established, and cherished, workout and conditioning routine.

By the end of the fourth quarter it become evident that, despite how much fun on one hand the commercial kitchen was, given the physical and metabolic costs, it was time to get back to my real mission – that being working with folks here at Older Bolder.

As a family we’ve also had an issue that’s demanded an all hands-on deck approach to managing, and while it’s been intense and demanding, the dust has finally settle again.

It’s been fascinating to begin to dial physical over-activity back a bit, focusing on quality in terms of workouts and training, and getting back to the basics in terms of eating optimally, dialing in stretching and conditioning to reach a new set of goals for 2020, resting well, and enjoying all that life has to offer.

the Older Bolder Life Friday Feast: Reverse Seared Cowboy Ribeye Steak

Most of us who enjoy a nice steak now and again have looked at that thick-cut, pristine ribeye sitting in all its glory on the counter and debated what cooking method might yield the very best tasting outcome on that given day.

Should I fire the grill (two zones of course), break out the sous vide circulator and cast iron, or sear it on the stove top?

Thin-cut steaks, and for my purposes today I’m talking about anything cut an inch or less thick, are a pretty easy cook (relatively speaking); they cook fairly quickly regardless of method and in fact pan-sear quite easily.

The thicker-cut steak(s) pose an interesting challenge for the carnivore; sometimes you nail it, but just as often your masterpiece is too rare or even worse, overdone, dry, and chewy.

We’ve shared before that we’re fans of sous vide to cook thick-cut proteins, using BPA-free plastic immersion bags of course, followed by a quick sear in cast-iron over high heat. We’ve been using that technique routinely now for a couple of years, though my son Jake in Montana recently challenged me to re-visit an old technique – the reverse sear.

We’ve used the reverse sear method to cook bone-in rib roasts for years now (what a great holiday treat), and have been cooking thick-cut, bone-in ribeyes this way for a few months (my favorite local market calls this particular cut pictured a cowboy ribeye – the rib bone is left in but it’s not as long as the over-marketed tomahawk steak). I have to admit, the results are amazing, and consistently produce the best steak the home cook can easily prepare at home.

The most critical caveat is that this method works best for thicker cuts, at least 1 and 1/2 inches and even better at 2 inches (or more).

There are several advantages to using the reverse sear method. Low and slow heat prevents overcooking and offers more control, and the warm oven dries the surface of your steak allowing for a better and more effective sear at the end. The reverse sear method is perfect for dialing in a medium-rare or medium steak, preserving more tender pink meat with smaller gray cooked (or overcooked) edges that any other technique.

Reverse sear shines with thicker cuts, allows for creation of a prize-winning crust when you do sear – use preheated cast iron and be creative with your fat (try ghee or bacon drippings!). And the fond and drippings in the pan can be used to whip up a tasty pan-sauce as well. And by the way, while not every one happens to have a sous vide circulator on the shelf, most of us have an oven handy.

The process really couldn’t be easier. Preheat the oven to 275 F and line a baking sheet with foil, then place a wire rack over the foil (allows hot air to circulate all around the steak).

Pat the surface of the steak(s) dry and liberally coat with salt and pepper, then place on the wire rack and slide into the oven.

Advice from steak experts varies as to when you need to start checking the internal temperature of the steak; for the steaks I’m routinely sourcing for our kitchen, I typically give them 20 minutes in the oven at 275F before starting to check internal temperatures with an accurate meat thermometer.

While it may sound like heresy, for the oven part of this process, you’re looking for temps of 90-95F for medium-rare and 100-105F for medium. Think about it, you’re not cooking the steak completely in the oven, and it’ll finish cooking during the sear to follow.

Over high heat on the stove top, and using a high smoke point oil (avocado oil, ghee, etc), sear the steaks for 2-3 minutes per side until the desired internal temp is reached: 120-122F for medium-rare and 126-128F for medium. We like to quickly sear the edges as well.

It’s vital that you rest the steak(s) for 10 minutes or so after searing to allow carryover cooking to finish these proteins perfectly (internal temps will rise another 5-10 degrees).

If you’ve not reverse seared steaks yet, give this method a spin – you’ll come back to it time and time again.

the Older Bolder Life Friday Feast: Miso Curry Chicken and Snap Pea Stir Fry

Even though the interval between the feast of Thanksgiving and the revelry of the Christmas and New Years week is shorter this year, that’s no reason to not keep slinging some varied and interesting dishes out of your kitchen the next few weeks.

One of my fly fishing buddies sent in a version of this Miso Curry Chicken and Snap Pea Stir Fry a few weeks ago, the week before Thanksgiving in fact, and we’ve just gotten around to fiddling with the recipe this past week here in our own kitchen.

While I’m a big curry fan, my wife typically isn’t, objecting to some curry dishes’ overpowering curry-ness (to the point sometimes of being bitter). The addition of a bit of miso and fresh ginger here seems to soften the curry a bit, and makes for a very interesting, almost subtle, and damned tasty variation that we’d never enjoyed at home before.

Fresh sugar snap peas happened to be piled high in the bin as I shopped a few days back, though this dish plays very well with snow peas or haricots verts (the thin French-style green beans) too.

Don’t skimp on the garlic or ginger, and I think this one’s better with a little more heat as well…

3 garlic cloves, sliced thinly
2 and 1/2 tbsp tamari
2 tbsp white miso
1 tbsp good fresh curry powder
2-3 tsp fresh ginger, finely grated
1-2 tsp red pepper flakes, optional
4 tbsp avocado oil, divided
1 pound boneless, skinless chicken breasts (or mixed with thighs) in 1/2-inch slices
Kosher salt, see notes
3/4 pound prepped and trimmed sugar snap peas, snow peas, or green beans
1/2 cup frozen or fresh (not canned) baby peas
3 green onions, thinly sliced

Combine together the garlic, tamari, miso, curry powder, ginger, red pepper flakes if using, and 2 tbsp oil in a small bowl and set aside.

Heat a tbsp or so oil in a skillet over medium-high heat and then sauté the chicken in a single layer until browned, turn and cook for another minute. You just want the second side of the chicken to become opaque; it won’t be cooked all the way through but remove to a plate anyway-there’s more cooking to come.

Now add the final tbsp of oil to the pan and cook the prepped beans (still on medium-high heat) until they brighten in color and begin to char in spots, 2-3 minutes. Remove to the plate with the chicken.

Reduce the heat to medium, and pour the curry-miso mixture into the same pan, and cook for another couple of minutes, stirring constantly. Look for the garlic to soften a bit and the curry to darken in color. Now add the peas and 1/2 cup of water, then return the chicken and beans to the skillet and toss to coat.

Cook another 3-4 minutes until the sauce has reduced by about half and thickens, tossing occasionally to coat the chicken and beans. Serve hot sprinkled with the chopped green onions/scallions.

the Older Bolder Life Vegetable Tuesday: Crispy Baked Sweet Potatoes with Hot Sauce Butter

Chatting with Chef Libby in Austin this week after Thanksgiving, she happened to ask if we’d ever tried her Crispy Baked Sweet Potatoes with Hot Sauce Butter and Pepitas before.

I couldn’t remember ever preparing this easy and damned interesting side before, which incorporates healthy sweet potatoes for those who occasionally incorporate the tuber into their eating plan, along with a big dollop of wonderful grass-fed butter spiced up with the hot sauce of your choice. Granted, not a keto-oriented dish you’d eat every night, but what a great way to add a bit of healthier carb into your rotation for those who need it.

This recipe really couldn’t be simpler, you’re just baking halved (small) sweet potatoes cut-side down on a baking pan until crispy, and slathering with a compound butter you’ve mashed together earlier. The butter does need to be at room temperature to incorporate the hot sauce well, and while Libby’s recipe includes a tablespoon of good honey, it’s not essential given the sweetness of the spuds.

The spiced, light sprinkle of pepitas adds another layer of taste and texture, and the burst of acidity from the lime takes this one over the top.

6 small sweet potatoes, scrubbed clean, halved lengthwise
1/3 cup avocado or extra-virgin olive oil
Liberal sprinkle of kosher salt

1/4 cup unsalted, grass-fed butter, room temperature
2-3 tbsp hot sauce of your choice (we like it with Valentina)
1-2 tsp fresh lime zest
1 tbsp good honey (optional)

1/4 cup raw pepitas (pumpkin seeds)
2 tsp ground cumin OR 1 tbsp ground coriander
Another sprinkle of good salt (a flaky sea salt shines here)
Lime wedges for serving

Preheat your trusty oven to 425; toss the prepared sweet potatoes onto a baking sheet, drizzle with 1/4 cup of your oil of choice, and rub to coat all sides. Sprinkle liberally with kosher salt. Align the sweet potatoes cut side down on the baking sheet, and bake for 28-30 minutes (test by inserting a sharp knife – it should slide in easily, and you want some crispy color on the cut sides).

While the spuds are in the oven, mash the hot sauce into the butter one tablespoon at a time (use a fork) until evenly incorporated; now mash in the lime zest and honey if using, and season to taste with more salt. Set aside.

Heat the remaining oil in small saucepan over medium heat and toast the pepitas until crispy and brown (3-5 minutes); keep them moving so they don’t burn. Remove from the heat, season with the cumin or coriander and a sprinkle of kosher salt.

When the sweet potatoes are done, artfully arrange on a platter, slather with the spicy butter, spoon the toasted pepitas over, and salt to taste. Serve with lime wedges on the side – the little bit of citrus acidity really plays well here.

Hanger steaks, like their kissing cousins skirt steaks, derive from the diaphragm though are much more tender and flavorful than skirt - which is still our favorite #fajita cut on the planet. I put this bowl together last weekend before heading down to Austin with our Asian Fried Cauliflower Rice; hot damn, was it tasty. And it’s a simple prep and cook to boot.
